I am enclosing some recipes that I make for my 98 year old
mother who can't wear her teeth anymore due to gum
shrinkage. I have several of them, but these are her
favorites. I hope this helps.
Pork Beef Sweet Potato and Pineapple Stew
2-3 lb ground pork or beef
1 cup onion, diced
Garlic powder and 1/2 tsp oregano
Salt and pepper
2 tbsp olive oil
1 large organic tomato soup or 2 small cans
1 can Taylor vacuum packed yams
2 tbsp raisins
1 tbsp honey
1 tbsp Chili powder and paprika
½ tsp cinnamon
Pinch of ground cloves
1 20 oz can crushed pineapple with juice
1 8-oz vegetable broth
Sauté pork in oil until cooked. Drain and rinse. Meanwhile,
heat oil in a Dutch oven over medium heat. Add onion and
cook, stirring frequently until softened. Add salt, garlic,
tomato soup, sweet potato, raisins, honey, chili powder,
cinnamon, oregano and clove. Add the pork, broth, apple
juice and pineapple. Cook, stirring occasionally for about
an hour. Cool in refrigerator for about an hour. Puree in
blender and portion servings in individual plastic
containers. Can freeze some of them.
Also, I boil 4 large yams covered with water until tender.
Chill them for a few hours and place in blender, 1 cup milk,
1/4 cup soft margarine and a dash of cinnamon. Add sweet
potatoes and blend until smooth. Can get about 6 or 8
servings of pureed sweet potatoes from this recipe. I also
have other vegetable recipes. One using frozen broccoli,
cauliflower and carrots blend thickened with potatoes. I
will send that on if your husband likes broccoli.
