Pasta Sauce w/Artichokes
Toss together:
1 16 ounce can artichoke hearts (drained
and cut into quarters)
2/3 cup green olives w/pimentos,
coarsely chopped
1/3 cup extra-virgin olive oil
2 Tbs lemon juice
3 garlic cloves, minced
pinch red pepper flakes
1 tsp oregano or basil
salt/pepper to taste
Cover and set aside for 1 hour to
marinate.
Cook 1 pound linguine or spaghetti to al
dente.
Combine the pasta and sauce in the pasta
bowl and toss well. Serve immediately
with grated Italian cheese on the side.
You may want to add cooked shrimp,
chopped hard salami, or cooked chicken.
