Cheryl, this recipe for Mexican
Slaw was found using the search area at the top of each
newsletter. (requested in the 1/11/10 newsletter)
Mexican Coleslaw
Makes 10 to 12 servings.
Mix together:
4 c. cabbage, finely shredded
1 large onion, chopped
1 medium green bell pepper, chopped
1 small jar pimento, chopped
Mix together and pour over cabbage mixture. Refrigerate 2-4
hours before serving.
1/2 c. mayonnaise
1/4 tsp. coriander
1/2 tsp. chili powder
1/2 tsp. liquid smoke
1 tsp. sugar
salt to taste
Pepper to taste
"I sometimes add red and yellow peppers for more flavor and
color. "
