Ham and Cabbage or Broccoli Soup

1 medium cabbage, diced
1 or 2 packages baby carrots
2 or 3 medium potatoes, diced or 3 cups Ore Ida frozen hash brown potatoes
1 large Swanson chicken or beef broth
1 cup diced onion
1 cup diced ham, optional
Drizzle of olive oil
1/4 cup soft margarine
1 cup sliced celery
1 tsp instant minced garlic
Salt and pepper

Place cabbage in pan and pour broth over cabbage. Add rest of ingredients and let it come to a boil. Lower heat and simmer for about an hour or until vegetables are tender.

Can also make this with two pkges frozen broccoli, cauliflower and carrot mixture instead of cabbage and omit carrots.
