Chinese Style Sweet And Sour Sauce
3/4 cup chicken broth
3/4 cup pineapple juice - drained from 16 oz. can pineapple
chunks
6 Tablespoons vinegar
6 Tablespoons sugar
3 Tablespoons soy sauce
3 Tablespoons ketchup
pinch of crushed red pepper
a little juice from a jar of maraschino cherries
Mix all together and bring to a boil. Stir in 3 Tablespoons
cornstarch dissolved in 1/4 cup chicken broth. Cook until
thickened.
Batter for 1 pound of meat - boneless chicken or pork
chunks:
3/4 cup cornstarch
1/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup water
1 egg - slightly beaten
Combine dry ingredients. Stir in water and egg until smooth.
Dip meat and deep fry until cooked through.
Drain. Put into sauce. Add pineapple from can where you got
the juice, some maraschino cherries from jar where you got
the juice.
Can also add: 2 green peppers, seeded, cut into slices, stir
fried for 3 minutes in 3 Tablespoons oil.
Don't know where we ever got this, it's on an old typed
card.
