Marlene,
it is wonderful that you are
helping feed the hungry.
I have a friend who cooked in a high school kitchen so she
is an expert at cooking for crowds. She put a lot of her
recipes in our church cookbook and I will try to send in a
few recipes at a time.

Chili for 300
25 to 30 lb. ground beef
12 #10 cans kidney or chili beans
1 #10 can catsup
4 #10 cans puree, or 2 #10 cans tomato paste
4-5 gal water
1 tbsp black pepper
1 tbsp ground oregano
4 tbsp celery salt
4 tbsp salt
4 tbsp cumin
5 tbsp onion powder
12 lge stirring spoons chili powder
1/2 cup sugar
Brown ground beef and drain. Mix all ingredients in a large
soup pot, or break down into smaller pots. I would add an
onion or two to this recipe, but this is as she wrote it.
