To Betty wanting a recipe for broccoli
and cheese soup, this is a very simple
one that I serve in bread bowls.
Broccoli Cheese Soup
1 (16 oz) bag frozen broccoli
1 cup diced Velveeta cheese
2 cans cream of potato soup
2 cups chicken broth
2 cups Half & Half
Boil broccoli and chicken broth for 8
minutes, covered.
Add Half & Half and potato soup. Stir
well.
Melt cheese in soup.
Serve.
Note: Have used 20 oz of broccoli, two
cans chicken broth, two cans cream of
mushroom soup, and a mixture of cheddar
and mozzarella cheese. Either way it was
delicious.
