Baked Apricot Fish
Makes 4 servings
Weight Watcher Points – 3 points
1 pound fish fillets
1/3 cup non-fat yogurt
3 tablespoons apricot jam
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
Place fish in baking casserole that has
been sprayed with Pam. Preheat oven an
bake at 450 degrees, uncovered, for 4 to
5 minutes. Drain any liquid. Mix
remaining ingredients and pour over
fish. Bake 2o minutes longer to heat
sauce.
