Strawberry Bread
3 cups flour
1-tablespoon cinnamon
2 cups sugar
4 eggs, beaten
2 cups strawberries, hulled and sliced
1 1/2 cups vegetable oil
1 1/2 cups pecans, coarsely chopped
Preheat oven to 325 degrees. Generously grease two 5 by 9
inch loaf pans. In a medium bowl, sift together the flour,
cinnamon and sugar. In another bowl, combine eggs,
strawberries and oil, mix well. Gradually add the flour
mixture, stirring to combine completely. Add the pecans and
mix well. Pour the batter equally into the two prepared loaf
pans. Bake for 1 hour or until a wooden pick inserted into
the center of the loaf comes out clean. Cool bread in pans
for 5 minutes. Turn bread out onto wire racks to cool
completely.
