This is
for Duffy who wanted a recipe for
BBQ chicken sandwiches. This is not
a BBQ style, but one my family
likes. You could finish this in a
slow cooker after sautéing the
onions and celery.
Shredded Chicken Sandwiches
1 Tbs. butter
1 onion, diced
1 stalk celery, chopped
1 cup chicken broth
3 boneless, skinless chicken breast
halves
1 Tbs. cornstarch
1/2 cup milk
salt and pepper to taste.
Melt butter in a saucepan and sauté
onions, celery and 1 Tsp. chicken
broth. Continue to sauté for 5
minutes. Add chicken and remaining
broth. ( At this time you could add
this mixture to a slow cooker and
cook until chicken is very tender.)
Otherwise, simmer on stove until
chicken is tender.
Remove chicken from pan (or slow
cooker) and allow to cool until it
is easily handled.
Shred chicken, return to pan (slow
cooker) and bring to a simmer.
Combine cornstarch and milk in a
small bowl. Slowly add to chicken
mixture, simmering 5 minutes.
Continue to simmer and shred chicken
until mixture has thickened but
still moist, approximately 8-10
minutes. Season with salt an pepper.
Makes 5-6 sandwiches.
Note: I think you might use a little
water (instead of the milk) to make
a paste of the cornstarch and after
mixing into the chicken mixture you
could add a 1/2 cup or so of a BBQ
sauce of your choice.
