I made the Jiffy Baked Corn Casserole

for dinner a couple of times except I used 1/4 c. butter. It
was great! I baked it at 350 degrees for 30 min. and 375
degrees for 30 min. (I added another dish to oven) and it
was perfect! You will need to bake it for 1 hour at 350 not
30 - 35 min. as the recipe states. I will make this again!
Jiffy Baked Corn Casserole
1/2 cup (1 stick) butter
2 eggs
8 1/2 ounces drained whole corn
8 1/2 ounces cream style corn
1 cup sour cream
1 box Jiffy corn muffin mix – (if you don’t use Jiffy mix,
you will need to add ¼ to ½ tsp. sugar to this recipe) your
choice if you like it like I do.
Salt and pepper, to taste
1 cup shredded Swiss cheese - actually this can be optional
Mix all together and bake at 350 degrees F for 30-35 minutes
in a glass baking dish. *I added 1 can (4 oz.), drained, of
chopped green chilis. I could have added 2 cans, though. It
made a nice flavor in the corn. posted under Casseroles on
