In a recent newsletter, one of members
was asking for a Hot Cross Bun recipe to
make during Lent. At the time, I
couldn't recall exactly what book the
recipe was in. I have many shelves of
cookbooks! I haven't made them in
several years, but today I did find the
recipe, so I would still like to
share it. It is wonderful, and I hope
you will agree.
Hot Cross Buns
1 pkg. hot roll mix
2 tbsp. butter, melted
2 tbsp. raisins (I use currants)
2 tbsp. chopped candied fruits and peels
1/3 cup granulated sugar
1 tsp. cinnamon
light cream
2 cups powdered sugar
1 tsp. vanilla extract
dash of salt
Prepare roll mix according to directions
on the package, adding butter, currants
(or raisins), fruits and peels, cinnamon
and granulated sugar. Mix well; cover
with damp cloth, and let rise in warm
place until double in size. Turn out
onto lightly floured board and knead
smooth. Shape into 12 buns; place on
lightly greased cookie sheet. Cover and
let rise until almost double. Make
shallow cross in bun tops with scissors,
or sharp knife. Bake at 375º for 15
minutes, or until done. Cool slightly.
Beat enough cream into powdered sugar to
make of spreading consistency; stir in
vanilla and salt. Ice buns in a cross
shape.
Makes 1 dozen.
I always had to double this recipe, as
they would disappear so fast!
