This is the cornbread mix that I make:

Cornbread Mix

4 cups flour
4 cups cornmeal
1 cup sugar (or less if you don’t plan to make sweet cornbread) I only use 1/4 cup, because I don't like sweet cornbread.
4 tablespoons baking powder
2 teaspoons salt

Mix together and store in sealed container in cupboard.

When you are ready to make cornbread, use;
2 cups mix
2 eggs
1 cup milk or buttermilk
1/3 cup corn or veg. oil (not olive oil)

Mix together and pour into a preheated greased cast iron skillet or a 8 x8 baking pan. I like to use bacon drippings to grease the pan, but you can use oil, Bake at 425 degrees for 20 - 25 min. until golden brown.

I love to use mixes, but I hate all the strange ingredients that are in store bought mixes. This mix makes about 4 batches of cornbread and you know what is in it. It makes really good cornbread. I bake it in my 12 inch cast iron skillet because I like thin crunchy cornbread. If you make it in the 8x8 pan it will be thicker.
