Zucchini Bread (Low Fat & Low Sugar)

Stir together:
3/4 cup whole wheat flour
1/4 cup white all purpose flour
1/2 tsp baking soda
1/2 tsp low sodium baking powder
1 tsp ground cinnamon

Add and combine:
2 egg whites
1/3 cup sugar
1/3 cup brown sugar
1/3 cup canola oil
1 tsp vanilla extract

Fold in:
1 medium zucchini, shredded, equal to 1 cup
1/2 cup Pineapple, crushed, with juice
1/3 cup Raisins (optional)
1/3 cup chopped pecans or walnuts

Grease 9x5x3 loaf pan. Fill with batter and bake 350 40-45 minutes. Let cool in pan.
