Vegetable Chicken Stack-Up
2 c. chopped cooked chicken
1/2 t. salt
1/8 t. pepper
1 qt. shredded iceberg lettuce
2 c. carrot slices
1 c. zucchini slices
1 c. red or green pepper rings
10 oz. pkg. frozen peas, thawed
1 1/2 c. mayo
2 T. chopped chives
Combine chicken & seasonings; toss lightly. Layer lettuce,
carrot, zucchini, chicken, pepper & peas in 2 1/2 qt. bowl.
Combine mayo & chives; mix well. Spread over salad. Cover &
chill. 6-8
servings.
