Tomato Salad
12 medium tomatoes, diced (8 cups)
2 large red onions, diced (about 3 cups)
1/2 cup + 1 tbsp finely chopped sweet pickle
1 cup rice wine vinegar
10-12 lettuce leaves
In a large bowl, combine the first 4 ingredients. Cover and
chill overnight. Using a slotted spoon, portion salad on
lettuce leaves (3/4-1 cup salad mixture per lettuce leaf).
