Here is a super egg substitute for those on restricted diets:

Super Egg Substitute

"For years I've been using boiled flaxseed meal as a substitute for eggs in baking, and the results
are remarkable.

The ratio is one part ground flaxseed to three parts cold water. I usually use 1/2 cup of flax meal and 1 1/2 cups of water, but any amount can be used.. Boil the mixture for three to five minutes, stirring constantly. Let cool and store in the refrigerator in a closed jar.  

TO USE:
Substitute one tablespoon of mixture for each egg. (To make enough for just one egg, mix one teaspoon flaxseed meal with one tablespoon of water.) It works beautifully in baking recipes or mixes."
