Here's a healthy pumpkin recipe!
Spicy Pumpkin Soup
1 jalapeno pepper, finely minced
1 T. extra-virgin olive oil
4 c. chicken or vegetable broth
1 can (15 oz.) solid-pack pumpkin
2 T freshly squeezed lime juuice
2 T chopped fresh cilantro
1 T pure maple syrup
In large saucepan over med-hi heat, saute jalapeno in hot
olive oil for 1 min., or until tender. Gently stir in broth,
pumpkin & lime juice. Bring to boil. Reduce heat, add
cilantro, and simmer 5 min. Stir in maple syrup just before
serving.
4 servings 90 cal. per serving
