Chinese Pepper Steak

1 pound boneless beef sirloin or round steak
1 tablespoon plus 1/4 cup Kikkoman Stir-Fry Sauce, divided
2 tablespoons vegetable oil, divided
2 medium bell peppers, cut into 1-inch squares
2 medium onions, cut into 1-inch squares

Cut steak across grain into thin strips, then into 1-inch squares. Coat with 1 Tbsp. stir-fry sauce. Heat 1-Tbsp. oil in hot wok or large skillet over high heat. Add beef and stir-fry about 1 minute; remove. Heat remaining 1 Tbsp. oil in same pan. Add peppers and onions; stir-fry 5 minutes. Stir in beef and remaining ? cup stir-fry sauce. Cook and stir just until beef and vegetables are coated with sauce.

Serve immediately.
Makes 4 servings

Chris in NM, I think it might be just as expensive to buy the milk, if you can find it - as it would be to buy the clotted cream. Before full cream Jersey milk became readily available my grandmother used to use un-pasteurised milk (pregnant mums a definite no no). Since joining the European Market, things like that are impossible to get a hold off.

Cornish Clotted Cream

2 pints Full cream Jersey milk (maybe you can source a gold cap milk)

Pour milk into a basin or dish, and leave in a cool place for at least 8 hours. The cream will rise to the top. Put the dish over a pot of boiling water. You may want to use a double boiler. Simmer the water until the cream begins to show a ring around the edge and the surface just begins to bubble.
After about 45 minutes to an hour, remove from heat. Let the cream cool, and skim the clotted cream from the surface.

Devonshire Cream

12 oz sour cream
8 oz cream cheese
Juice from 1 lemon
2 tsp vanilla
2 cups icing/confectioners' sugar

Blend all ingredients until smooth

Hi Nancy, here I am with another request. My family has five birthdays this month and I'll be baking for most of them. Does anyone have a TNT recipe for a moist, chocolate fudge cake? I am still hunting for one that is like THE best cake I had years ago. My family always loved fudge cakes with a thick, fudge frosting. I can't find our recipe.

In Monday morning?s newsletter, there was a recipe for Pistachio Refrigerator Cake. It sounded so good and easy for a Labor Day picnic so I wanted to thank whoever sent it in. There was no name.

In the south, the children have been in school for a month already so they are welcoming this ?off?

Nancy, this is in response to Genie, who in the Sunday 9/6/09 Newsletter was looking for an address for hummingbird feeders. My most recent success with feeders for hummers is the 'Humzinger' feeders. I purchased mine on-line by going to
www.humzinger.com.

These feeders come in two sizes and were recommended by another Nancylander a few months ago. The only downside of these feeders (for me) is that I'm not sure the hummers can get the sugar water from the bottom of the feeder and it is sometimes difficult to see when the sugar water level to tell you when the feeder needs to be cleaned and refilled.

Wanted to share this recipe with everyone. A lady brought it to our golf outing and it was a hit. Hope you try it and enjoy it. It is a light dessert.

Tapioca Jell-O

2 boxes of tapioca pudding- the kind you cook
1 box any flavor jell-o
3 cups water
Place all in medium size pan and bring to a boil.
Stir continually while it begins to thicken.

When thick, remove from heat and pour into a bowl and cool. Set in refrigerator and let it get firm.

When firm, beat until light and fluffy and then fold in one tub of cool whip. Must use regular cool
whip- not light, as it won't set up.

Refrigerate. Enjoy.

Easy Carrots

16 oz baby cut carrots
1/2 Tbsp Margarine
1/4 Cup water
1/4 tsp cinnamon
1 Tbsp honey
1/4 tsp salt

In medium saucepan, combine all ingredients, stir well and bring to a boil. Reduce heat, cover and simmer until carrots are just tender, about 10 minutes. Uncover , cook over medium heat until almost all liquid evaporates, about 3 minutes. Serves 4

Coconut Biscotti

Stir together and set aside:

3/4 cup all-purpose flour
3/4 cup whole wheat flour
3/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/8 tsp. grated nutmeg
3/4 cup sugar
1 cup flaked coconut
1 cup mini chocolate chips

Beat together and add to flour mixture:

3 large eggs
1 tsp. vanilla extract
1 tsp. coconut extract

Line a baking sheet with parchment paper or grease sheet. Bake in 300 oven for 40 minutes. Remove from the oven and let cool for 5 minutes on a wire rack. Using a serrated knife. Cut the logs 14-20 slices. Lay the slices on their sides and bake for 10 minutes. Flip the slices over and bake for 10 minutes more.

I have had this recipe for over 37 years and have made it many times.

Barndt's Salisbury Steak

1 lbs. ground beef
1/2 to 2/3 cup bread crumbs or crushed saltine crackers
1 egg
2 tablespoons catsup
2 tablespoons water
2 tablespoons Worcestershire sauce
2 tablespoons finely chopped onion
1/2 teaspoon pepper
1/4 to 1/2 teaspoon salt
1/4 to 1/3 cup flour
1 can Mushroom soup
1/3 to 1/2 can milk

Mix ground beef, bread crumbs, egg, catsup, water, Worcestershire sauce, chopped onion, pepper
and salt. Mix well and shape as patties or any shape you like. With the patties lightly bread with flour. Have your skillet medium hot with a little olive and regular oil and brown the patties. After browning lover temperature to simmer mix soup and milk and pour over patties and let cook until
done. You have have a gravy to pour over the patties. I have mash potatoes and a salad with this
meal.

I had to have a chocolate fix the other day, so made these brownies. Oh my! Yummy is way to
mild a word.

Ganache Dark Fudgy Brownies

3/4 cup Hershey's Cocoa
1/2 teaspoon baking soda
2/3 cup butter or margarine, melted and divided
1/2 cup boiling water
2 cups sugar
2 eggs
1-1/3 cups all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup Hershey's Semi-Sweet Chocolate Chips, divided

Chocolate Ganache(recipe follows)
Fresh strawberries(optional) ? I did not do

Heat oven to 350?F. Grease 13x9x2-inch baking pan. Stir together cocoa and baking soda in large bowl; stir in 1/3 cup butter. Add boiling water, stir until mixture thickens. Stir in sugar, eggs and remaining 1/3 cup butter, stir until smooth. Add flour, vanilla and salt; blend completely. Stir in 1 cup chocolate chips. Pour into prepared pan. Bake 35 to 40 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.

Prepare Chocolate Ganache. Pour over brownies. Refrigerate 20 to 30 minutes. Cut into 3-inch squares; cut squares diagonally in half to form a triangle shape. Garnish with fresh strawberry, if desired. Makes 12 brownies.

Chocolate Ganache:
Place 2 cups (12-oz. package) Hershey's Semi-Sweet Chocolate Chips and 1 cup whipping cream in microwave-safe bowl. Microwave at Medium (50%) 30 seconds; stir. If necessary, microwave an additional 30 seconds or until chocolate is melted and mixture is smooth when stirred. Makes about 2 cups ganache.

This stew recipe is great for cooler days. It is very much T & T and very good!

Bob?s Calico Meatball Stew

1 ? lbs. ground beef
? lb. pork sausage
1 c. soft bread crumbs
? tsp. oregano
1 egg
1 Tbl. Vegetable oil
2 (10 ? oz.) cans Franco American beef gravy
1 (14 ? oz.) can stewed tomatoes
3 1/3 c. potatoes cut in 1? cubes
1 ? c. diagonally sliced carrots
? c. chopped onion
1 lg. bay leaf
? tsp. pepper
1 c. frozen peas, thawed ? use snow peas

In medium bowl, mix thoroughly beef, sausage, bread crumbs, oregano and egg. Shape into 24 meatballs. In 6-qt. Dutch oven, over medium heat, in hot oil, brown meatballs on all sides. Spoon off fat. Add gravy, tomatoes, potatoes, carrots, onion, bay leaf and pepper. Heat to boiling, stir
occasionally. Reduce heat to low. Cover, simmer 1 hour. Stir in peas. Cook, uncovered, at least 5 minutes more. Remove bay leaf and serve. Makes 8 servings.

Ribs and Sauerkraut
Servings: 6

3 lb country style ribs
2 one lb pkgs sauerkraut
2 large onions, chopped
Salt and pepper to taste

Preheat oven to 350 degrees. Place ribs in a shallow baking dish. Cover with sauerkraut and top
with onions. Sprinkle with salt and pepper. Cover with lid and bake for 2 1/2 hours or until meat is
tender.

Summertime Squash

2 small zucchini
2 small yellow squash
1 small red pepper
2 cloves garlic
2 tsp. cornstarch
1/4 tsp. salt
1/2 C. vegetable broth
1 T. vegetable oil
1 tsp. butter

Cut zucchini and yellow squash diagonally into 1/4 inch thick slices. Cut red bell pepper lengthwise in half. Remove stem and seeds. Rinse, dry and cut into 1/4 inch thick strips. Finely chop garlic.

Combine cornstarch and salt in small cup. Stir in vegetable broth until mixture is smooth; set aside. Heat a large nonstick skillet over medium-high heat 1 minute or until hot. Drizzle vegetable oil into skillet. Add butter; and swirl to coat bottom of pan. Heat 30 seconds. Add zucchini and yellow
squash; cook and stir 6 minutes or until crisp-tender. Stir in red bell pepper and garlic; cook, stirring constantly, for about 1 minute. Stir reserved broth mixture until smooth and add to skillet. Cook and stir until sauce boils and thickens. Serves 4.

Good evening Nancy and All, I hope someone can help me with my Aunt Sallie's pickle recipe. It was in my mother's collection, but apparently the page with the last step(s) was lost. It could be that since vinegar was used in step 3, pickles will be allowed to stand only in sugar/spice mixture a few weeks before eating. Sounds delicious. I have searched the internet for Nine-Day Pickle Recipes and have not found one like this. Would appreciate any suggestions:

Aunt Sallie's Pickle Recipe

1 gallon cucumbers, sliced medium thin
1/2 gallon water
1 cup salt (cooking or pickling salt)

Step 1. Mix water and salt and pour over sliced cucumbers and let set 3 days.

Step 2. Drain and wash one time. Mix 1/2 gallon water with 2 Tbsp alum and pour over cucumbers, let set 3 days.

Step 3. Drain and wash 2 or 3 times and let drain real good. Put back in jug or gallon jar and pour enough white vinegar over to cover. Let set 3
days.

Now, pour vinegar off and discard. Put cucumbers in a large pan or bowl and pour 5 pounds of sugar over and mix in 1 Tbsp pickling spice, loose, or put in cheesecloth...(recipe ends here; also, one recipe I found while searching said they found if you added a stick of cinnamon it takes flavor to
another level.)

Seafarer Dip
U.S. Fish and Wildlife Service

1 (7 oz) can minced clams
2 (3 oz) pkgs cream cheese
1/4 tsp salt
2 tsp grated onion
1 tsp Worcestershire sauce
3 drops Tabasco
2 tsp lemon juice
1 tsp chopped parsley
Potato Chips, or chips of your choice

Drain clams. Save liquor. Soften cheese at room temperature. Combine all ingredients except potato
chips and liquor; blend into a paste. Gradually add about 1/4 cup clam liquor and beat until consistency of whipped cream. Chill. Serve in a bowl surrounded by potato chips. Makes about 1 pint dip.

Curried Couscous Salad
Mrs. Jane Thomas

Dissolve: 2 chicken bouillon cubes in 2 cups boiling water. Mix with 1 cup couscous. Let stand 5
minutes.

Add:
1/3 cup slivered almonds
2 small zucchini, thinly sliced
1/2 cup each raisins and chopped dried apricots

Add dressing:
1/2 cup mayonnaise
2 Tbsp olive oil
2 Tbsp lemon juice
2 Tbsp chutney (Major Greys)
2 tsp curry powder
1/4 tsp each dried mustard, ginger and cinnamon.

Season with red pepper, if desired. Refrigerate for at least 2 hours or overnight.

Here is a super egg substitute for those on restricted diets:

Super Egg Substitute

"For years I've been using boiled flaxseed meal as a substitute for eggs in baking, and the results
are remarkable.

The ratio is one part ground flaxseed to three parts cold water. I usually use 1/2 cup of flax meal and 1 1/2 cups of water, but any amount can be used.. Boil the mixture for three to five minutes, stirring constantly. Let cool and store in the refrigerator in a closed jar.  

TO USE:
Substitute one tablespoon of mixture for each egg. (To make enough for just one egg, mix one teaspoon flaxseed meal with one tablespoon of water.) It works beautifully in baking recipes or mixes."

Strawberry Cheesecake Ice Cream

3 ounces cream cheese, softened
1 (14 ounce) can sweetened condensed milk
2 cups half-and-half
2 cups whipping cream
1 tablespoon vanilla extract
1/2 teaspoon almond extract
1 box thawed chopped frozen strawberries or 2 cups fresh chopped strawberries

In large mixer bowl, beat cream cheese until fluffy. Gradually add sweetened condensed milk until smooth. Add remaining ingredients; mix well. Pour into ice cream freezer container, and freeze according to manufacturer's directions.

Makes 1 1/2 quarts

Orange Sherbet

6 oranges
1 cup sugar
2 cups water
1 lemon
1 egg white
few grains salt

Extract juices from fruit. Strain. Combine sugar, salt, and water in a saucepan and heat to boiling. Boil 5 minutes, then cool. Add fruit juices. Partially freeze. Fold in stiffly beaten egg white, then continue freezing until firm. Note# Food coloring can be added to the juice of the oranges. 8
servings.

For Diane in Houston, I made the Edamame Salad and loved it. Thank you for posting it. The flavor
is wonderful. My changes and omissions follow, hope you don't mind them Dianne.

Edamame Salad

1 pound shelled edamame
1 TBSP. sesame seed oil
1 TBSP. rice wine vinegar
2 TBSP. soy sauce
2 tsp. sweet chili sauce
1/4 c. toasted sliced almonds
2 green onions chopped
1/4 c. chopped basil
1/4 c. chopped mint

Boil the frozen edamame for three minutes. Drain and immerse in cold water to stop cooking process. Mix remaining ingredients in a bowl. Toss the edamame in the dressing until well coated.
Chill before serving.

My NOTES:
Instead of boiling the edamame, I used one of the new Zip Lock steaming bags and it worked wonderfully. I steamed them for 7 minutes, them rinsed with the cold water.

I doubled the dressing ingredients, used 5 green onion, the called for amount of almonds, except mine were garlic flavored ones and omitted the basil and mint. I took it to a party and it was gone in a jiffy with many requests for the recipe.

Zucchini Casserole

1 1/2 lbs. sliced zucchini (about 3 large)
4 medium sliced tomatoes
1 t. salt
1 1/2 lbs. ground beef, cooked and drained
1/4 C. chopped onion
3/4 C. raw rice (not instant)
2 T. chopped parsley
1/4 C. chopped green pepper
1 C. shredded Cheddar cheese

Line bottom of a 9-inch-by-13-inch pan with half of the zucchini, tomatoes and salt. Mix remaining ingredients together, with the exception of the cheese, and place on top.

Put the other half of the zucchini, tomatoes and salt on top. Cover and bake for 1 1/2 hours at 375 degrees. Uncover, sprinkle with cheese and cook until melted.

Makes 8 to 10 servings

This TNT Chocolate Vinegar Cake is in response to Sharon who wanted it for her husband in the September 4 daily recipes. I got the recipe almost 50 years ago as a student on a very tight budget. The tasty icing recipe is also very economical plus it isn't too sweet.

Chocolate Vinegar Cake

3 1/4 cups plus 2 tablespoons flour
2 1/4 cups sugar
6 3/4 tablespoons cocoa
3/4 teaspoons salt
2 1/4 teaspoons baking soda
3/4 cup oil
2 tablespoons plus 3/4 teaspoon vinegar
2 1/2 teaspoon vanilla
2 1/4 cups water

Mix flour, sugar, cocoa, salt and baking soda in a medium bowl. Sift into a 10" x 15" ungreased baking pan. Make 3 impressions in pan. Pour oil in one, vinegar in one and vanilla in one. Pour the water over the top and mix well with a fork. Bake at 350 for 30 - 45 minutes or until a toothpick comes out clean.

Glossy Chocolate Icing
1 cup sugar
6 Tablespoons flour
6 Tablespoons cocoa
5 Tablespoons butter or margarine, divided
2 dashes of salt
1 cup boiling water
1 teaspoon vanilla

In a saucepan, mix sugar, flour, cocoa, 2 tablespoons butter, and salt. Add boiling water and cook until real thick. Remove from heat and add remaining 3 tablespoons of butter and vanilla, stirring until smooth. Spread onto cake while hot.

Note: Sometimes I make an extra recipe of this icing for me to eat with a spoon. LOL! Thanks for your many, many good recipes.

Apple Crisp for Two

2 cups peeled, cored, and sliced apples
1/2 cup light brown sugar, firmly packed
1/4 cup all-purpose flour
1/4 cup oats
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 tablespoons soft butter

Place apples in a buttered 9x5x3-inch loaf pan. Combine brown sugar, flour, oats, cinnamon, nutmeg, and butter. Mix until crumbly; sprinkle over apples. Bake at 350? for about 30 minutes, or until apples are tender and topping is nicely browned. Serve warm with ice cream or whipped topping.

Old Time Lemonade

Juice of one lemon per person
1 to 2 T. sugar per serving
6 to 8 oz water per serving
Maraschino cherries, for garnish (if desired, a little cherry juice will make
pink lemonade)

Mix all ingredients and serve over ice.

Nancy, this update was just posted by Kolby's Mom. What wonderful news it is, and, as you all can imagine, we are so ready for Kolby to come home. He truly if a Miracle of God.
Thank you to everyone for your concern and most of all for your prayers. Without those, he would not be where he is today. God truly hears and answers prayers.

We are having a great Labor Day. Kolby had therapy this morning and afternoon, but since it's a
holiday he finished early. We've walked to the hospital's garden and koi pond. Kolby's learned to
play UNO and beats Mom and me!

Tomorrow I will meet with Kolby's therapists and hear their reports. I will find out what happens
next or what they suggest. We should get to go home this week. We will probably continue
outpatient therapy at home.

Kolby's in good spirits today. He's very ready to go home. Mom and I are, too!

As always, thank you for your prayers! God is continuing to heal Kolby and make him stronger.
