Peanut Butter Thumb Prints

Cream together:
8 tbs butter, at room temperature
1/2 cup packed light brown sugar
1/2 cup granulated sugar

Add:
1 large egg, at room temperature
1 teaspoon vanilla extract
3/4 cup creamy smooth peanut butter

Mix together:
1 3/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt

Add dry ingredients gradually to wet and form into dough. Roll into balls or use small ice cream scoop to form balls. Place on greased cookie sheet(s). Depress thumbprint into each cookie and fill with favorite jam. Bake 350 10-15 minutes or until lightly golden (depending on oven).
