When we were in Pigeon Forge, TN. a few years ago, we ate at the old
mill restaurant. they had the best corn chowder I have ever eaten. here
is a recipe that was posted.
Old Mill`s Signature Corn Chowder
2 c chicken stock or beef stock or ham stock
garlic powder
1 red bell pepper, sliced
3/4 c crumbled unsalted oyster crackers
onion powder
3 c onions, sliced
2 c half-and-half
2 c water
2 tbsps butter, divided
2 c frozen corn (defrosted)
1 c clam juice
white pepper
1 green bell pepper, sliced
3 c potatoes, sliced
1/4 c flour
Mix liquids & 1 tbsp butter, add potatoes & onions, cook
this
until done. Mix cracker crumbs, flour & seasonings..
Add to potato & onion mixture. Saut?sliced bell peppers in
remaining butter till tender. Add to potato & onion
mixture..
Stir to mix well, bring to boil; add half & half & corn..
Simmer for 15-20 mins.
