Light Cheesecake
Beat together:
2 (8 oz) light cream cheese
1 cup light sour cream
1/2 cup sugar (or sugar substitute)
2 eggs (or equivalent of egg beaters)
3 tbs flour or corn starch
1 teaspoon vanilla
Topping:
1 cup sour cream
2-3 tbs sugar (depending on taste)
Pour into a crust or individual glass or baking dishes.
Bake 325 oven about 30 minutes or until the cake is set and
starting to turn slightly brown and crack on top.
Turn the oven off and open the oven door slightly and let
the cake stand in the oven for a further 30 minutes before
removing from the oven.
Mix topping. When the cake has completely cooled, spread the
topping on the cake. Refrigerate and serve with drizzle of
maple syrup or chocolate sauce and nuts.
