My daughter uses a super simple recipe for pork loin for all
of our family gatherings and there's never a bite leftover.
Because it's cooked in a crock-pot it comes out very moist
and tender (almost fall-apart tender) and it's just
delicious. I think that the recipe came from this newsletter
a few years ago so I send my apologies to the person who
originally sent it in for not having their name to credit
them with this wonderful recipe.

Cranberry Pork Roast
3 lb. or more boneless pork loin
1 can (16 oz.) cranberry sauce (we use jellied but can use
whole-berry)
1 envelope dry onion soup mix
Rub roast with salt, pepper and desired seasonings (we use
salt sparingly because onion soup mix has quite a bit of
salt). Place roast in crock-pot then break up cranberry
sauce with fork and spread over roast. Sprinkle onion soup
mix over cranberry sauce and cook for 8 hours on low or 4
hours on high.
