This TNT Chocolate Vinegar Cake is in response to Sharon who
wanted it for her husband in the
September 4 daily
recipes. I got the recipe almost 50 years ago
as a student on a very tight budget. The tasty icing recipe
is also very economical plus it isn't too sweet.
Chocolate Vinegar Cake
3 1/4 cups plus 2 tablespoons flour
2 1/4 cups sugar
6 3/4 tablespoons cocoa
3/4 teaspoons salt
2 1/4 teaspoons baking soda
3/4 cup oil
2 tablespoons plus 3/4 teaspoon vinegar
2 1/2 teaspoon vanilla
2 1/4 cups water
Mix flour, sugar, cocoa, salt and baking soda in a medium
bowl. Sift into a 10" x 15" ungreased baking pan. Make 3
impressions in pan. Pour oil in one, vinegar in one and
vanilla in one. Pour the water over the top and mix well
with a fork. Bake at 350 for 30 - 45 minutes or until a
toothpick comes out clean.
Glossy Chocolate Icing
1 cup sugar
6 Tablespoons flour
6 Tablespoons cocoa
5 Tablespoons butter or margarine, divided
2 dashes of salt
1 cup boiling water
1 teaspoon vanilla
In a saucepan, mix sugar, flour, cocoa, 2 tablespoons
butter, and salt. Add boiling water and cook until real
thick. Remove from heat and add remaining 3 tablespoons of
butter and vanilla, stirring until smooth. Spread onto cake
while hot.
Note: Sometimes I make an extra recipe of this icing for me
to eat with a spoon. LOL! Thanks for your many, many good
