This is a classic and one of our favorites. My husband's a bean nut as well and
begs me to make this soup as soon as the weather starts turning a bit cool. It's
very good with beef, but we like it without the meat. Low calorie, high protein
and filling.

Cabbage Beef Soup (Beef Is Optional)
1 lb ground beef (brown with the onion & drain)
1 large chopped onion
1 medium chopped green pepper (more or less)
4-5 C chopped cabbage (I just use one small head - love cabbage)
2 cans kidney beans undrained (I use light, can use dark or mixed)
2 cans tomato sauce
1 can cut tomatoes
2-3 C water (adjust to pot size & thickness of soup that you like)
? C medium picante sauce (mild for less spice)
3-4 beef bouillon cubes
1? tsp Cumin (love this! Can't omit!!)
? tsp salt
Combine all & simmer 1 hour.
