Bean And Cornmeal Pie
2 cans (16 oz each) kidney beans or black beans, rinsed and
drained
2 cups chopped onion
1-1/2 cups chopped tomatoes
1/4 cup bottled salsa
1 large green pepper, chopped
1 cup frozen corn kernels
1 tsp ground cumin
2 tsp chili powder
1 tsp or more mixed herbs
1/2 tsp salt
Topping:
3/4 cup flour
3/4 cup cornmeal
3/4 cup skim milk
2 tsp baking powder
Dash of salt
2 tsp sugar
Dash of chile pepper
1 egg white
1/2 cup corn kernels
Saut?onion and green pepper in vegetable stock or water
until tender. Add tomatoes, salsa, beans, salt and corn. Add
the spices and simmer while preparing topping.
To prepare topping, sift together the dry ingredients. Beat
egg white and milk. Stir into flour mixture. Fold in corn
and spread this batter over the bean mixture. Bake at 375
degrees 25 minutes.
