For your info the Dallas Morning News had a "Best Chicken
Fried Steak in Texas" contest some years ago and sent,
supposedly qualified judges, around the state. The winner
was Ann's Restaurant in the small town of San Jaun, Texas. Her restaurant was, as
well as I remember, was very small in an old filling station,
and was inundated daily from around the state. Here is her
Gravy Recipe (which is a little thick for me)
Ann's Cream Gravy
3 chicken bouillon cubes
1 cup hot water
4 tablespoons butter
4 tablespoons Wondra Flour
2 cups warm milk
1 teaspoon white pepper
1 teaspoon salt
1/2 teaspoon nutmeg
Since the recipe was published in the paper I have her
Chicken Fried Steak
recipe if anyone wants it. Also, for those who care, most
Chicken Fried Steak and Country Fried Steak in our country
is cross tenderized pieces of thin round steak.
