French's? Classic Burgers
Makes 6 Servings
prep 10 min.
cooking 10 min.
1 1/2 lbs. ground beef 1 1/2 lbs.
1/4 cup FRENCH'S? Classic Yellow? Mustard
1/2 teaspoon garlic salt
1/4 teaspoon ground black pepper
6 hamburger rolls
MIX ground beef, mustard, garlic salt and pepper. Shape into
6 hamburger patties.
GRILL burgers over medium-high heat until juices run clear
(160?F internal temperature).
SERVE burgers
on hamburger rolls with extra mustard.

I am also from Dubuque, Iowa. We
retired to Arizona several years ago, but I will always be a
Dubuquer. There was a place in town where we could get our
Turkey Dressing Sandwiches, they were delicious. This is a
similar recipe I was given to me by my daughter. This recipe
is for a large crowd, but could be cut down for a smaller
group.
I appreciate your recipe newsletter. I have copied many of
the recipes to my recipes folder, but it will take another
lifetime to try all of them.

Turkey Dressing Sandwiches
2 Bags Brownberry Sage Dressing Mix
1 Stick Margarine
2 Med. Onions, Chopped fine
4 Stalks Celery, Chopped fine
1 tsp Pepper
1/2 tsp. Pepper
1/2 tsp. Salt
1 48 oz. Can Chicken Broth
1-10-12 lb. Turkey-(reserve turkey juice), Shred turkey
Over medium heat melt margarine, add celery & onions, cook
until onions are translucent., add chicken broth & turkey
juice. Add stuffing mix, shredded turkey & mix well. Keep
warm covered in slow oven or Crock Pot until serving.
mixture should be sticky. Add more chicken broth if it
becomes dry. Serve hot on buttered buns. Makes enough for
50-75 sandwiches, depending on bun size. Can be frozen &
reheated later. This recipe can use up your leftover turkey,
also.

Mom is looking for the
spice company
that was posted on your site. The company was located in
Tennessee. She thought they had good prices and wanted to
restock with new spices.
Also, there was discussion about
electric mixer beater blades that scraped the side
of the bowl as it worked. (Christmas Gift
Idea) Need to know where to order them please.
Mom is also finding it hard to find recipes for
Thai food that
doesn't call for the truly exotic spices...anyone out there
that can help it would be appreciated. Cousin is trying to
work, take classes, keep house, and start her own business
at the same time. Mom wants to help by cooking for the
couple or making simple things that they can heat up and eat
(you know, homemade TV dinners). They love Thai, and lean
toward being vegetarians, ugh. Personally, wondered if
anyone had a truly great Russian Tea mix that you just add
water and heat...looking forward to cool days and thought it
also would make a great "sharing" gift for others.
Oh, and please let Jim in Texas know that I went and got the
MasterCook computer program for mom and myself so we ready
to request a Jim Jubilee CD special. Please let us know how
to obtain a copy. And Jim, you never knew how many friends
you have, until you buy a cottage by the lake!
Nancy, have you thought of a "picnic
on the ground" (with all your friends
bringing some of the wonderful recipes) and just meeting at
a park or somewhere (Jim, here is your opportunity to cook
for a LOT of people). Plan it in the Spring time, we could
plan for a getaway weekend to Texas and boost the American
economy! Make it the official "Nancy Day"!

for drop in company, this is the answer. Of course, you

Apples, apples, apples galore. Great crop this year. I also
have a huge crop of Jalapenos, so I'm making my oldest son a
batch of Jalapeno and Apple Jelly.
Yesterday I took time out to try Dianne in Wisconsin's
Crockpot Caramel Rice Pudding , did you miss something from
the recipe? I cut the raw rice down to 2 cups, we like a
nice moist pudding and I thought that 3 cups was way too
much. Followed the rest of your recipe, had to add half a
pint of milk after an hour, even with the couple of
alterations and turning the cooker off, it turned out to be
completely inedible.

I made the Party Size Crunchy Onion Chicken Tenders tonight
for dinner with mashed potatoes and a shared avocado. I made
some changes to the chicken recipe. This is the original
recipe:
Party Size Crunchy Onion Chicken Tenders Redone
Makes 8 Servings
prep 10 min.
cooking 15 min.
(3 cups) FRENCH'S? Original or Cheddar French Fried Onions 6
oz. can
1/4 cup flour
2 lbs chicken tenders .
2 eggs, beaten
CRUSH French Fried Onions with flour in plastic bag. DIP
chicken tenders into egg; coat in onion crumbs. BAKE 15 min.
at 400?F until chicken is cooked. SERVE with French's Honey
Mustard and Spicy Buffalo Ranch Dip.

Party Size Crunchy Onion Chicken Tenders
serves 2
(1 ? cups) FRENCH'S? Original or Cheddar French Fried Onions
6 oz. can
1/8 cup flour
1/2 lbs chicken tenders .
1 egg, beaten
CRUSH French Fried Onions with flour in plastic bag. DIP
chicken tenders into egg; coat in onion crumbs. BAKE 15 min.
at 400?F until chicken is cooked.
What I found out is that I should have dipped the tenders in
the egg, then flour, then the crushed onions. The coating
had a tendency to fall off the chicken. I also pan fried
them in an electric skillet in a small amount of
canola/olive oil. I have made chicken in the oven before and
it turned out very dry. Ours was very tender and juicy! If
you notice, we did not use a dip. It was not needed.

'relative' of Dianne in Wisconsin's old time potato recipe.
And she's right, they're really good.
Grated
Creamed Potatoes
an old fashioned goody to make in advance
3 baking potatoes
1 to 1 1/8 c. heavy whipping cream
Salt & coarse pepper
Cook potatoes in their skins; cool, peel, & grate into a 1
1/2 qt. buttered casserole**, salting & barely dusting with
pepper after each potato. Cover tightly with plastic wrap &
chill 8 hours to overnight.
To bake, heat oven to 350?, pour cream all over potatoes, &
bake 1 hour. **If using a clay or china baker, set at room
temperature 20 minutes & start in a cold oven. This will
hold, covered, for 15 minutes. Simple but excellent; several
qualities make it a great company potato dish. Serves 4, if
doubled, use a larger but not much deeper baker. Amazing
with Swiss Bliss Baked Steak. Also Slow Cooker Short Ribs or
any pork roast. Somebody deserves thanks, wish I remembered
who.

me. Sounded really good so thought I would share it with

Subject: Pineapple Pie
This is so easy even I can do it and it doesn't require
baking! Also, it makes TWO pies! Yum!
Pineapple Pie
1 lg sugar free instant vanilla pudding
1 lg can crushed pineapple in juice
8 oz fat free sour cream
1 lg cool whip (12 oz)
2 ready made graham cracker pie crusts
in a bowl, sprinkle pudding mix over pineapple and stir
until mixed (will be very thick). Add sour cream and cool
whip and stir well. Pour into pie crusts and refrigerate at
least two hours before serving.
See......told you it was easy! It's very light and not very
sweet. That's why you can't stop eating it!

This is a good recipe that my
daughter's 4-H leader served a couple of years ago at a
meeting. She served it with key lime tortilla chips, and had
printed out the recipe for everyone ahead of time because
she always received requests for the recipe once someone had
tried it. Hope you all enjoy it!
Mango
Papaya Salsa
2 ripe, firm mangoes
1 sweet onion, chopped
1 red pepper, chopped
1/2 green pepper, chopped
1 small jalapeno, seeded and minced
2 cloves garlic, minced
6 Tbsp. fresh lime juice
1 ripe papaya
1/2 tsp. salt
1/4 tsp. pepper
1 Tbsp. chopped cilantro
1 tsp. minced lime peel
Seed and peel the papaya, peel mangoes and cut flesh from
pit-cut into 1/4 inch dice. Mix onions, peppers, garlic,
lime peel, lime juice, cilantro, salt and pepper. Stir well.
Add papaya and mango, toss gently. Chill covered at least 2
hours and up to 24 hours. Enjoy!

The
turkey/chicken sandwich discussion of
yesterday (Oct. 7) reminds me of a tasty sandwich served in
a Worcester, Ma. deli in the 1990s called a Pilgrim
Sandwich. Between 2 slices of your bread of choice was
layered thin slices of turkey, a Tablespoon of gravy,
dressing, and a small amount of jelled cranberries. The
small amounts of gravy and cranberries moisten the sandwich
to perfection! I love to make these sandwiches using
leftovers anytime of the year.

Is there any chance someone would
remember the ingredients for the
body cream/lotion that was in the
newsletter sometime ago. I remembered baby lotion and there
was 2 other products, also need to know the amounts to be
used. This is the greatest I have ever used and thought I
saved it.

I don't know about you good cooks,
but I use a lot of Jiffy mixes.
However, I add 1/4 cup of oil
to the batter. I have found that whatever I
make stays moist longer. If I don't add any oil, no matter
how I wrap what I have made, it dries out too much before it
is all eaten.

Here's a cake recipe for the season. This is especially for
the ones who "think" they don't like pumpkin. Just give it a
try.
Pumpkin
Pecan Bundt Cake
1 (18 oz.) spice cake mix
1 cup canned pumpkin, (not pie filling)
1/2 cup vegetable oil
3 eggs
1/2 cup water
1/3 cup whole pecans
1 small pkg. instant vanilla pudding mix
1 tsp. cinnamon
1 tsp. butter flavoring
Mix all but pecans; beat at medium speed for 5 minutes.
Grease bundt pan with Crisco and sprinkle with flour. Place
pecans in bottom of pan. Pour in batter; bake 40-50 minutes
in preheated 350 deg. oven. Let cool 10-15 min. Invert on
wire rack. Then, add Carmel Icing.
Carmel Icing
1/3 cup brown sugar and 1/4 cup oleo
Bring to boil stirring constantly for 2 min.
Add
1/2 tsp. vanilla
2-3 tablespoons milk (Can use evaporated or regular milk)
Return to boil
Add
1 cup powered sugar
Beat with mixer for 30 seconds or till thick; Drizzle over
cake. This hardens very quickly so observe the 30 seconds.
Suggestion... you may choose to use 1/2 cup of chopped
pecans added to the batter instead of the whole pecans in
the bottom of pan. Also, instead of icing, whipped cream
garnish at serving time is another choice. However, the
carmel icing makes this exceptionally pretty and festive.

Recently I used a recipe I have had
for years. I had forgotten how good it was.
Baked
Chicken Breasts
4 chicken breast (skin removed)
1 can whole cranberry sauce
1/2 cup Catalina dressing
1/2 package dry onion mix
Arrange chicken breasts in greased 9 by 12 pan. Heath
cranberry sauce, Catalina dressing and dry onion soup mix.
Cover and bake for 50 to 60 minutes in a 350 degree oven.
Note- This is very good. I
like to make 1/2 of the recipe for smaller portions.

Fluffy Pumpkin Casserole
1 (29 oz.) can solid pack pumpkin
1/3 c. brown sugar
5 tbsp. margarine, melted
1 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. ground ginger
3 eggs, well beaten
1/2 c. cream or milk
2 tbsp. honey
1/2 c. walnuts, chopped
Mix pumpkin, sugar, margarine, salt, and spices in large
bowl. Add eggs and cream; mix thoroughly. Spoon mixture into
casserole dish. Drizzle honey on top. Sprinkle with walnuts.
Bake at 375 degrees in preheated oven for 50 minutes or
until slightly puffed. Serve at once.

Pumpkin Dump
Cake
4 eggs
1 1/2 cups sugar
1 can condensed milk
1 - (16-20 ounce) can pumpkin
1 tablespoon pumpkin pie spice
1 teaspoon cinnamon
1 yellow cake mix
1 1/2 stick margarine
Mix 4 eggs, 1 1/2 cups sugar, 1 can condensed milk, 1 can
pumpkin, pumpkin pie spice & cinnamon. Pour into a dry 9 x
13 inch pan. Sprinkle the dry cake mix evenly over the top
of the custard mix. Cut margarine into slices & lay them
evenly over the cake mix. Bake at 350? for 1 hour. Top will
be brown & custard set. Serve with whip cream.

Cranberry Kiss Cookies
1/2 cup margarine or butter
1 cup all-purpose flour
3/4 cup sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon baking powder
1 cup quick cooking rolled oats
1 cup coarsely chopped cranberries
1/2 cup finely chopped walnuts
42 milk chocolate kisses
In a mixing bowl beat margarine or butter with an electric
mixer on medium to high speed for 30 seconds or until
softened. Add the flour, sugar, egg, vanilla and baking
powder. Beat until thoroughly combined. Stir in oats,
cranberries and nuts. Drop by round teaspoons onto a greased
cookie sheet . Place a chocolate kiss in the center of each
cookie. Bake in a 375 oven for 10 minutes or until edges are
lightly browned. Remove and cool on a wire rack. Makes 42
cookies.

Dear Nancy, it was such fun to read
Sandy in Iowa's letter about the turkey or chicken
sandwiches which are famous in Dubuque. I lived there for
five years, 1970-1975. My husband worked for Tel Graphics
the printing company the newspaper owned at that time. We

from Hades Hot Pumpkin Relish
1 c. finely diced pumpkin
1/2 c. finely diced canned papaya
1/8 c. finely diced onion
1/2 clove minced garlic
1 T. cilantro
1/2 diced Habanero pepper
4 oz. juice from canned papaya
Combine all in bowl & cover. Set in frig overnight. Serve on
grilled or barbecued pork medallions.

This is for Marlene FL, who asked
for my pumpkin butter recipe. I am not sending it as Chris
had her recipe in the 10/7/09 newsletter and the 10/6/09
newsletter had a link for a pumpkin butter recipe that is on
Nancy?s site. Barb Oh also had a great pumpkin butter recipe
in the 9/4/09 newsletter that uses applesauce and apple
juice. Marlene was also interested in apple butter recipes.
Feel free to adjust the spices in the apple butter recipe to
meet your taste. I have also made it using all white sugar
and substituting half the sugar with Splenda.

Apple Butter
4 Quarts peeled tart apples, finely chopped or thinly sliced
1 1/2 cups sugar
3/4 cup Brown sugar
2 3/4 tsp. cinnamon
1/4 tsp. ground cloves
Place apples in crockpot. Combine remaining ingredients and
pour over apples. Cover and cook on high for 3 hours. Stir
with a large spoon every hour. Reduce heat to low and cook
10-12 hours until mixture becomes thick and dark in color.
Using a wire whisk, stir occasionally. Freeze or
refrigerate. Can also be canned in sterilized jars.

I have never heard of floured bacon,
but I learned from my Mother-In-Law that to
flour streak O' lean
would make it a lots better. A lot more crispy. To be honest
I didn't eat streak O' lean until I ate it this way.
It's surprising the hints you learn from this letter.

Grilled Chicken Salad
Makes 4 Servings
prep 15 min.
cooking 10 minutes
1/2 cup reduced-fat vinaigrette salad
dressing
1/4 cup FRENCH'S? Honey Mustard or Honey Dijon Mustard
1 tbsp. grated orange peel
1 tbsp water .
1 tsp. poppy seeds (optional)
1 lb. chicken tenders
1 tbsp Jerk or Caribbean seasoning
8 cups cut-up Romaine lettuce
3 cups cut-up fruit from salad bar
MIX salad dressing, mustard, orange peel, water and poppy
seeds; mix well. Reserve.
Rub chicken tenders with Jerk seasoning. Skewer chicken and
grill over
medium-high heat until no longer pink in center.
Arrange lettuce and fruit on salad plates. Top with chicken
and serve with dressing.
