In the 10/30 newsletter Sue requested a TNT cold pasta salad
I often make one that we really enjoy.
Pasta with vegetables
2 cups mixed vegetables cooked until just tender
3 cups of the multi colored Rotini
6/8 cherry tomatoes
1 small onion
Cook pasta and vegetables then let them cool.
Cut up the onion and tomatoes and mix in with the veggies.
Mix pasta, vegs, onion and tomatoes.
We use assorted dressings on this. Sometimes I want Ranch
other times I prefer a Balsamic. It goes with anything. Real
good.
