Orange/Cranberry/Pistachio Biscotti
In a processor mix together:
1 stick butter, softened
3/4 cups sugar
1 tbs. grated orange zest
1/2 tsp. vanilla extract
2 eggs
2 cups flour
1 and 1/2 tsp. baking powder
1/4 tsp. salt
Remove mixed dough from processor and hand knead following into dough:
1/2 cup chopped white chocolate*
1/2 cup dried cranberries
1 and 1/4 cup pistachio nuts, chopped
Form into 2 logs on greased cookie sheet(s).
Bake 350 20-25 minutes. Cool 10 minutes and cut with serrated knife into slices.
Set oven to 300 degrees.
Place cut slices on their side and return to oven to bake for an additional 10
minutes on each side.
*Instead of inserting the chopped white chocolate before baking the logs you can
dip end of each cooled cookie in melted white chocolate for presentation .
