Microwave Peanut Brittle

1 cup white sugar
? cup white corn syrup (Karo)
1? cups roasted salted peanuts (or any roasted nut, really good with cashews)
1 teaspoon butter (not margarine)
1 teaspoon vanilla
1 teaspoon baking soda

In a 1 ?-quart microwave safe bowl, stir together sugar and corn syrup. Microwave on HIGH for three (3) minutes. Stir in peanuts. Microwave on HIGH for three (3) to five (5) minutes or until golden brown. NOTE: In my microwave I only do it for four (4) minutes.

Add butter and vanilla, blend well. Microwave on HIGH one (1) to two (2) minutes more. NOTE: In my microwave I only do it for ninety (90) seconds. Remove from the microwave and add baking soda and gently stir until light and foamy.

Pour onto a lightly greased foil lined cookie sheet. Let cool, then break into pieces. Store in an airtight container. Makes about one pound.
