Easy Anise Biscotti
1 stick soft butter
3/4 cup sugar
3 eggs
2 cups flour (an maybe an addition of up to 1-2 tbs)
2 tbs baking powder
3 tsp anise extract (actually any flavor can be used)
Mix together (I use the processor) and then form into log on a greased cookie
sheet. Bake 350 20 minutes.
Cool log 15 minutes and then cut into slices. Turn slices on their sides and
bake for 10 minutes. Flip on other side and bake an additional 10 minutes.
Also, dried fruits, nuts or flavored chips (chocolate, butterscotch, cinnamon
etc) can be incorporated into the dough after it is taken from the food
processor. Approximately 1 cup total. Enjoy!
