This is for Marlene FL, who asked for my pumpkin butter recipe. I am not sending it as Chris had her recipe in the 10/7/09 newsletter and the 10/6/09 newsletter had a link for a pumpkin butter recipe that is on Nancy?s site. Barb Oh also had a great pumpkin butter recipe in the 9/4/09 newsletter that uses applesauce and apple juice. Marlene was also interested in apple butter recipes. Feel free to adjust the spices in the apple butter recipe to meet your taste. I have also made it using all white sugar and substituting half the sugar with Splenda.

Crockpot Apple Butter

4 Quarts peeled tart apples, finely chopped or thinly sliced
1 1/2 cups sugar
3/4 cup Brown sugar
2 3/4 tsp. cinnamon
1/4 tsp. ground cloves

Place apples in crockpot. Combine remaining ingredients and pour over apples. Cover and cook on high for 3 hours. Stir with a large spoon every hour. Reduce heat to low and cook 10-12 hours until mixture becomes thick and dark in color. Using a wire whisk, stir occasionally. Freeze or refrigerate. Can also be canned in sterilized jars.
