Hi Everyone. Here is another recipe I found in the
boxes of collected recipes going back many years. It is from the Baker's "Angel
Flake" Coconut Company. Easy and good.
Creamy Coconut Pie
1 pkg. (3 oz.) cream cheese, softened
1 tblsp sugar
1/2 cup milk
1 1/3 cups flaked coconut
1 8 oz. container Cool Whip, thawed
1 prepared 8 or 9 in. graham cracker crust
Combine cream cheese, sugar, milk, and coconut in electric blender. Cover and
blend at medium speed for 30 seconds. Fold mixture into Cool Whip in a bowl.
Spoon into crust. Freeze until firm, about 4 hours. Let stand at room temp. 5
minutes before serving. Store leftover pie in freezer.
