In the 11/11/09 newsletter Joyce in KY
Said that she had recently found lemon vanilla wafers and
wanted recipes where she might use them. I have not seen
them at our local stores, so have not tried them in either
of these recipes, but I don’t see why they would not work,
if they are just like the vanilla wafers. The first recipe
was originally submitted by Tona in a 2007 newsletter. I
have not made the recipe, but it had good reviews and
everyone always raved about Tona's recipes.

Vanilla Wafer Coconut Cake
Serves 18
2 sticks margarine
2 c. sugar
6 whole eggs
1 12oz. box vanilla wafers, crushed
1/2 c. milk
1 7oz. pkg. flaked coconut
1 c. chopped pecans
Cream margarine & sugar. Add eggs, one at a time & beat
after each. Crush the vanilla wafers & add alternately with
the milk. Add coconut & chopped pecans.
Bake in a greased & floured tube pan at 325 degrees for 1
hour & 15 minutes.
