For Sandra from Oregon: My family really likes this orange
cake. It is baked in a tube pan but I think it has the
texture of a pound cake (maybe a little lighter.) It is
called
Orange
Sunshine Cake
1 box supermoist cake mix
1 jar (10 ounces) orange marmalade
2 teaspoons grated orange peel.
Preheat oven to 350°. Grease and flour tube pan. Prepare
cake mix according to directions except decrease water to 1
cup and add orange marmalade and peel. Bake 45 to 50 minutes
or until cake pulls away from pan. Cool 10 minutes. Remove
from pan and cool completely.
May be glazed with 1/4 cup powdered sugar, 1 teaspoon grated
orange peel, and 2 teaspoons orange juice mixed until
smooth. (I don't glaze mine.)

many grocery stores are selling gluten free food. I saw I
believe a Betty Crocker brownie mix the other day in a local
grocery store that was gluten free. Lots of resources
available now days, just have to always be on the look out.

This recipe is for Sandra from Oregon. Sandra, my family
really loves this cake. It is like a pound cake. And, when I
take it to any function, there isn't any leftover to bring
back home.
Orange Crush
Pound Cake
1 cup Crisco Shortening
1/2 stick margarine, room temperature
2 3/4 cups sugar
5 eggs
3 cups plain flour
1/2 tsp. salt
1 tbsp. vanilla extract
2 tbsp. orange extract
1 cup orange crush soda
Cream together shortening, margarine and sugar. Add eggs,
one at a time. Add the other ingredients and mix well. Bake
in a 325 degree oven for 1 hour and 25 minutes.
Topping:
1/2 stick margarine, room temperature
2 (3 ounce) packages cream cheese
1/2 tsp. orange extract
2 cups powdered sugar
Put on cake while warm. ( I wait until it is almost cooled)

This is a recipe for a wonderful Orange Cake:
Orange
Juice Surprise Cake
1 box butter cake mix
1 box instant vanilla pudding
4 eggs
1/2 cup vegetable oil
1 cup orange juice
Mix all the ingredients and bake cake as directed in a Bundt
pan at 350 degrees for 40-45 minutes. Spray the pan with
Pam. Cool and let stand:
flip onto plate.
Icing:
1/4 cup of orange juice (I usually use a little more)
1 cup of sugar
1 stick of butter
Boil in a pan for 2 minutes. Pour over the cake: let the
cake set and soak into the cake.

To Tammy in Jamestown, NY-- Looking for the
round cloth covered board for
rolling out pie crusts and cookies--I live
in Wisconsin and the Blain's Farm and Fleet stores carry
something like you are describing. It has circle marked
dimensions for like 8" circles etc. in red, etc. I don't
know the brand name but my sister has one and uses it all
the time and just loves it. The headquarters for the store
are in Janesville, Wisconsin. I believe they sell for $25-28
or something like that. The next time I get to the store I
can look at them again and get back to you. I live in
Madison, WI about 7 miles from the store. This was posted on
the Oct. 29th 2009 Recipes page. Hope this helps.

Caramelized Butternut Squash
2 medium butternut squash -- (4 to 5 pounds total)
6 tablespoons unsalted butter, melted
1/4 cup light brown sugar -- packed
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Preheat the oven to 400 degrees F.
Cut off and discard the ends of each butternut squash. Peel
the squash, cut them in half
lengthwise, and remove the seeds. Cut the squash into 1 1/4
to 1 1/2-inch cubes and place them
on a baking sheet. Add the melted butter, brown sugar, salt,
and pepper.
With clean hands, toss all the ingredients together and
spread in a single layer on the baking sheet. Roast for 45
to 55 minutes, until the squash is tender and the glaze
begins to caramelize. While roasting, turn the squash a few
times with a spatula, to be sure it browns evenly. Taste for
seasonings and serve hot.

Gail in LA asked about
Meyer lemons.
I have a tree in FL and the juice and zest from the lemons
taste exactly like the juice and zest from the fresh yellow
lemons in the grocery store.
However, the Meyer lemons are the shape and color of
medium-sized oranges. The tree is easy to grow in southwest
FL and I grafted a bud from a calamondin (small sour orange
for cooking and baking) on it so now I have both fruits on
the same tree.

Hi Nancy, I have really enjoyed the
pictures of your little ones.
Someone asked for Pasta salad recipes. This is one I have
made for years. Usually I just make the basic pasta salad
and leave out the cold cuts, etc.

Cold Cuts &
Macaroni Ring
2 pkgs. cold sliced meat or cold meat of your choice.
1 (8 oz) pkg elbow macaroni (cooked & drained)
2 tbsp oil
2 tbsp cider OR wine vinegar
1/2 tsp salt
1/8 tsp black pepper
1/4 tp dry mustard
1 or 2 chopped green onions
1 cup of Miracle Whip type salad dressing
2 tbsp, chopped pimento (optional)
1 hard cooked egg
1/2 to 1 cup chopped celery
Place cooked macaroni in a large bowl. Combine oil, vinegar,
salt, pepper and dry mustard - pour over macaroni. Fold in
rest of ingredients.
Spoon into a 5 cup salad mold, packing down a spoon. Cover
and chill for 2 to 3 hours. Turn out onto a large platter.
Arrange cold meats around ring. Fill center with lettuce or
tomato wedges.
NOTE:-
I usually just make it in a nice serving bowl and serve from
it with the cold meats on a separate plate as well as the
lettuce and tomatoes on another dish.
Do it the original way if for a fancy dinner.

This is for Sandra of Oregon that is
looking for a moist Orange Cake. I get raves from everyone
when I make this & it's very moist.

Orange Cake
1- Duncan Hines cake mix
1-15 & ¼ oz. Del Monte diced peaches (drained)
1-11 oz. can mandarin oranges
(drained)
1- small box orange Jell-O
½ cup hot water(for the Jell-O)
½ cup cold water(for the Jell-O)
Make cake as directed on pkg. & add the peaches & mandarin
oranges. As soon as it comes out of oven mix the Jell-O with
the hot water till dissolved & then add the cold water to
Jell-O. Pour this over the cake after poking holes in cake
with a skewer or something similar. When cake is completely
cooled add topping.
Topping
1- 8 oz. Cream cheese, room temperature
1- 8 oz. cool whip(thawed)
1- 20 oz. can crushed pineapple with juice
1- small box of instant vanilla pudding
Mix all of this together & put on cooled cake.

recipe for Norwegian Fruit
Soup. Please do so Pat as I'd like to make
both of your recipes and see which I prefer. Thanks for the
offer. For any of you Nancylanders who haven't had Fruit
Soup, I highly recommend that you try it. And, share with
friends and neighbors as most of the recipes make quite a
large batch.

In the 10/21 newsletter, Athena posted
the Holiday Pumpkin Loaf.
The recipe calls for 1 t. pumpkin pie spice. Is that
something you can buy in the spice section...in its on
bottle? The recipe then calls for cloves and nutmeg. I
always thought pumpkin pie spice WAS cloves and nutmeg. Hope
I'm making some sense!

Hi Nancy-- Two things. First, Chris from
California with her Montana Enchiladas brought to mind my
Enchiladas we cooked at the ranch for the hunters during
hunting season. Second, Fajitas for Marisa in Ft. Wayne, we
marinate ours before grilling.
Enchiladas
by Jim
2 pounds ground meat
chopped onion
chopped bell pepper
salt and pepper
grated cheese
flour tortillas
Wolf Brand Chili
Sharp Cheddar Cheese slices
Brown the ground meat with onions and bell peppers and salt
and pepper. Meanwhile soften the tortillas in microwave
oven. On a tortilla place ground meat mixture down center
and top with some more chopped onion and grated cheese. Roll
up and place in a roasting pan, seam side down. Repeat until
pan is full. Cover with foil and place in a 325 F preheated
oven until a strong smell of cooked onions, about 20
minutes. Take out of oven and completely cover with
abundance of chili. Put back in oven, uncovered until chili
is bubbling. Out with pan and cover with cheese slices and
back in oven until cheese melts.

Fajitas by Jim
(Marinade)
1 cup Soy Sauce
1 1/2 cup Worcestershire Sauce
1/4 cup oil
4 ounces Liquid Smoke
3 tablespoons sugar
2 tablespoon lemon juice
1/4 teaspoon garlic powder
6 ounces beer
(Fajitas)
2 pound flank or skirt steak
2 large onions, sliced
2 large bell peppers, sliced
Flour tortillas
salsa
guacamole
sour cream
Let flank or skirt steak marinate over night or at least 4
hours. Grill over hot coals for 6 to 7 minutes per side.
Marinate onion and green pepper slices for an hour before
grilling steak and grill them, before the steak, until limp.
Cut steaks across grain into strips and serve on warm
tortillas wrapped with onions, peppers, salsa, guacamole and
sour cream.

This is my Orange Pound Cake recipe for
Sandra in Oregon.
Orange
Pound Cake
2 cups sugar
1 cup butter, softened
1 cup orange yogurt
2 Tsp. orange juice
1 Tsp. grated orange peel
6 eggs
3 cups flour
1 tsp. baking soda
1/4 tsp. salt
Heat oven to 325 degrees. Grease and flour a 10 or 12 cup
Bundt pan. In a large mixing bowl, mix sugar and butter
until very light and fluffy. Add yogurt, orange juice and
orange peel.
Add eggs; mix well. Add all remaining ingredients; mix well.
Spoon into prepared pan.
Bake at 325 degrees for 60-65 minutes or until tested done.
Let cool 10 minutes. Remove from pan; cool completely on
rack. Drizzle with Orange Glaze if desired.
Orange Glaze
2 cups sifted powdered sugar
1 Tsp. butter, softened
2-4 Tsp. orange juice
1-2 tsp. grated orange peel
In medium bowl, mix sugar and butter. Gradually add juice
until desired consistency; mix until smooth. Stir in orange
peel. Pour over cake.

The orange color
is, in part, from the chili peppers in the seasoning mix.
Chili peppers & Chili powder give me heart burn. I season
fajitas, chili, and all my Mexican dishes with plain ground
cumin, garlic, and black pepper. I like the flavor, it's not
hot and it doesn't give me heartburn.

Orange Cake
1 box of yellow cake mix
2/3 cup vegetable oil
1 small box orange Jell-O
1/2 cup boiling water
4 eggs
1/4 cup orange juice..
Dissolve the Jell-O in the boiling water. Mix rest of the
ingredients together along with the Jell-O. In a tube pan
that has been lightly sprayed with Pam, pour batter.
Bake:325 degree for 45-60 minutes. Remove from oven and pour
hot glaze over the cake while it is still in the pan. Punch
holes iin the top of the cake before pouring, with a fork.
Glaze Recipe: 2 cups of confection sugar
1/2 cup orange juice.
Mix this together and pour over cake. Let cake set in pan
till cool. Delicious and moist.
