Oyster casserole for Phyllis (11/11):
Oyster Casserole
2 c. toasted breadcrumbs
1/2 c. melted butter
2 pts. oysters
1/4 c. whipping cream
2 t. dry sherry
1 t. pepper
1 t. Worcestershire sauce
1/2 t. salt
Dash of cayenne pepper
Combine breadcrumbs & butter, stirring until well coated.
Sprinkle 1/3 breadcrumbs in greased 9" sq. baking dish.
Drain oysters, reserving 1/4 c. liquid. Soon half of oysters
evenly over breadcrumbs. Repeat layers. Combine whipping
cream, reserved oyster liquid, sherry, &
seasonings; stir well. Pour over oysters, and sprinkle w/
remaining breadcrumbs. Bake 425 for 30 min. 6 servings.
