Never Fail Meatloaf
2-1/2 pounds ground beef, chicken or turkey
2 eggs, beaten or ½ cup egg substitute
1 - 6 oz pkg Stove Top stuffing mix
1 cup hickory flavored barbecue sauce or can of tomato soup
2 tbsp. dried onion or 1 tbsp onion powder
1 tsp instant minced garlic or 1 tsp garlic powder or ½ tsp
garlic paste
1 cup cola, lemon-lime or Dr pepper soda
1/4 cup diced bell pepper
Glaze:1 cup barbecue sauce and 1/4 cup brown sugar
Preheat oven to 350 degrees. Lightly grease 9 x 13 inch
baking dish. In a large mixing bowl, combine ground meat,
eggs, stuffing mix, barbecue sauce, onion, garlic and pop.
Mix thoroughly and place into the prepared baking dish.
Shape into 2 loaves. In a small bowl, combine the barbecue
sauce and brown sugar and blend well. Pour the glaze over
the 2 meatloaves. Cover the baking dish and bake in the
preheated oven for 60 to 90 minutes. Uncover the last 15
minutes of bake time. Let sit for 15 minutes before slicing.
