Tracy from Pa, do I have a perfect meatloaf recipe for you. I have used this recipe for many years, my mother started teaching me to cook when I was 12 years old and I am now 63. I love cooking and do it often. This is the best meatloaf I have ever eaten and it makes great sandwiches and is good served as leftovers.

Meat Loaf

2 pounds ground beef
1 and 1/2 cup crumbled saltine cracker crumbs
2 eggs, slightly beaten
3/4 cup chopped onion
1/2 cup chopped green pepper
1 and 1/2 cups ketchup
dash black pepper
no salt needed (because of the crackers and ketchup)

If you like a topping, this is very good. sometimes I use it and sometimes I don't, it is optional.

1/4 cup packed brown sugar
1/2 cup ketchup
1 teaspoon dry mustard

Mix first seven ingredients and form into a loaf, place in greased loaf pan. Combine the ingredients for the topping and spread it over top of meatloaf. Bake 375 for 1 hour and 20 minutes.
