Lemonade Sugar Cookies
1 cup sugar
1 cup butter
2 eggs
3 cups sifted all-purpose flour
1 teaspoon baking soda
1 can (6 ounces) frozen lemonade concentrate, thawed
extra Sugar (not confectioners)
Cream sugar and butter. Add eggs and beat until light and
fluffy. Sift flour and soda together.
Add alternately with 1/2 cup lemonade concentrate. Drop by
teaspoonfuls, 2 inches apart, onto an ungreased baking
sheet. Bake in a preheated 400 degree oven for 8 minutes or
until lightly browned edges. Brush hot cookies with
remaining lemonade and sprinkle with sugar. Remove to wire
rack to cool.
