I got this recipe in Hawaii in 1966. It was served in the
dining room at the Kauai Surf. I have tried many other
recipes but this is still my favorite. It is quick to make
and has a great Banana taste.
Kauai Banana Bread
Cream:
2 cups sugar
1 cup shortening or 2/3 cup oil
Add:
4-5 ripe bananas, mashed
4 eggs, well beaten
Shift:
2 1/2 cups flour
1 tsp salt
2 tsp baking soda
Blend:
wet & dry ingredients (do not overmix)
Bake: 350° 45-50 Min
Makes: 2 – 1 Lb Loaves
Note the number of bananas will dictate how moist the bread will be.
