Fresh Apple Cake
 
4 c. apples (peeled and chopped
2 c. sugar

Pour sugar over apples and let stand for 1 hour.

Coat apples with this mixture:
3 c. flour
1/2 t. nutmeg
1/2 t. cinnamon
1/2 t. salt
2 t. baking soda

Add:
1 c. oil
1 t. vanilla
1 c. chopped nuts
2 well beaten eggs

Mix all this by hand, do not use a mixer. Pour into a greased and floured tube pan. Bake at 325 degrees for 1 hour 15 min.
