Hi Nancy-- Two things. First, Chris from California with her Montana Enchiladas brought to mind my Enchiladas we cooked at the ranch for the hunters during hunting season.

Enchiladas by Jim

2 pounds ground meat
chopped onion
chopped bell pepper
salt and pepper
grated cheese
flour tortillas
Wolf Brand Chili
Sharp Cheddar Cheese slices

Brown the ground meat with onions and bell peppers and salt and pepper. Meanwhile soften the tortillas in microwave oven. On a tortilla place ground meat mixture down center and top with some more chopped onion and grated cheese. Roll up and place in a roasting pan, seam side down. Repeat until pan is full. Cover with foil and place in a 325 F preheated oven until a strong smell of cooked onions, about 20 minutes. Take out of oven and completely cover with abundance of chili. Put back in oven, uncovered until chili is bubbling. Out with pan and cover with cheese slices and back in oven until cheese melts.
