Just wanted to say I made the Turkey Meatloaf and much to my amazement it was very good.

No matter how many times I try cooking meatloaf it is always hard but this time with the stuffing mix, it worked out great.

I wonder too what you might have done to make your lemon pie 'runny'. I thought maybe you put the whole eggs in instead of only the yolk? That might have done it. I find pies are usually too sweet for me, altho that is the purpose I know. Here is a recipe that I always make . off the cornstarch box. There again, this calls for 1 cup of sugar and I never use that much. 3/4 of a cup is more than enough, but I will put 1 cup in the recipe order because that is the original recipe. This is from Best Recipes from back of boxes, bottles , can and jars.

Lemon Pie
1 cup sugar
3 tbsp Argo corn starch
1 1/2 cups cp;d water
3 egg yolks. slightly beaten
1 lemons grated rind
1/4 cup lemon juice
1 tbsp margarine

1 9 inch baked pastry shell
3 egg whites
1/3 cup sugar

Stir together 1 cup of sugar and cornstarch in a 2 quart saucepan. Gradually stir in water until smooth. Stir in egg yolks, stirring constantly, bring to boil over medium heat and boil 1 minute. Remove from heat. Stir in lemon rind, lemon juice and margarine. Cool. turn into pastry crust.

Beat egg whites until foamy in a small bowl with mixer at high speed. Add 1/3 cup sugar, 1 tbsp at a time, beating after each addition. Continue beating sntil stiff peaks form. Spread meringue around edge of filling, first touching crust all around, then fill center. Bake in 350 deg. oven for 15 minutes until lightly browned. Cool at room temperature away from Draft. Makes 6 to 8 servings.

I hope this turns out good for you. I have made pies from this recipe for years.

Susana in LA, I just finished making your Ms Lucy's Blueberry Pie recipe. It is very good! My DH and I licked the beaters and the bowl. LOL It's very rich so next time I might cut the sugar back a little bit. I may have to send some over to the neighbor or else we will eat the whole pie!

I don't usually go into the archives of old newsletter, but recently I was searching for a recipe and ended up in some of the older newsletters. It was a treat to see some of the same names that are still contributing. It made my heart glad.

Spiced Pineapple

2 fresh pineapples
1 1/2 c. granulated sugar
1 c. distilled white vinegar
10 whole cloves
1 (3 inch) cinnamon stick

Cut pineapple crosswise into 1/2 inch slices; pare; remove eyes. Quarter slices; remove cores. Combine sugar, water and vinegar; heat to boiling. Add spices tied in cheesecloth bag, then pineapple. Simmer 30 minutes, stirring occasionally. Remove spice bag. Continue simmering while quickly packing one clean hot jar at a time. Fill to within 1/2 inch of top making sure vinegar solution covers fruit. Cap each jar at once. Process 5 minutes in boiling water bath. Makes 2 pints.

Deviled Egg Potato Salad

9 hard boiled eggs, peeled
1/2 c. chopped onions
1/4 c. shredded pimentos
1/4 c. shredded green pepper
1/2 c. mustard
1 tbsp. salt
6 c. boiled potatoes, cubed
1/2 c. shredded dill pickles
1/4 c. shredded celery
1 c. mayonnaise
1 tbsp. paprika

Cut 6 boiled eggs in half; remove yolk. Place yolks in bowl and mix with 1 teaspoon pickles, 1 teaspoon mustard, 1 tablespoon mayonnaise, dash of salt; stiff eggs with the yolk mixture. Set eggs aside. Mix potatoes with remaining ingredients. Add eggs (flaked with fork) last. Top with paprika and arrange deviled eggs around top of salad for decorative look.

Glazed Chicken
Weight Watcher Points - 4 Points

4 (3 oz.) chicken breasts (skinless, boneless)
1/2 cup fat free Catalina salad dressing
1/2 package onion soup mix
1/2 cup water packed apricots

Place chicken breasts in a pan sprayed with nonstick spray. Mix salad dressing and soup mix together. In a blender, blend apricots until smooth. Add apricots to soup and salad dressing mixture. Pour sauce over chicken, reserving some for basting. Bake uncovered at 350 degrees for one hour, basting every 20 minutes. 4 Servings.

Angel Food Cake with Strawberries

1 pkg. cream cheese
1 (14 oz.) can sweetened condensed milk
1/3 c. lemon juice
1/4 tsp. almond abstract
2 c. strawberries, sliced
1 sm. container of Cool Whip
1 angel food cake

Combine first 4 ingredients and set aside. Slice top 1/4 off of cake and set aside. Carve tunnel out of remaining cake and break into small chunks. Mix chunks of cake, strawberries and Cool Whip into cream cheese mixture. Fill tunneled cake with mixture and replace lid on cake. Extra mixture can be placed in center hole.

Chicken Salad

3 c. chicken, cut in large chunks
1 c. celery, diagonally sliced
3 hard-boiled eggs, quartered
1/2 to 3/4 c. stuffed green olives, sliced
1/4 to 1/3 c. mayonnaise
1/4 to 1/3 c. sour cream
1 generous tbsp. ketchup
Salt and pepper to taste

Mix chicken, celery and olives together in a bowl. Combine mayonnaise, sour cream and ketchup and add to chicken mixture. Add salt and pepper to taste. Serve on lettuce leaf and garnish with wedges of tomatoes and hard-boiled eggs. Serves 4-6.

Hi I got a set of springform pans for a gift the only thing I know that I can use them for is to make cheesecakes. Do you know of any other recipes that you can use those type of pans for. I would experiment but I hate to have to clean up a big mess. LOL

I am looking for a recipe I had several years ago called "Cranberry Jewel Salad". It had Jell-O, applesauce, cream cheese and I think some nuts. When it was nearly jelled, you folded in cubed jellied cranberry sauce "jewels". I sure would like to find that recipe again. Any help?

Baked Steak

Sirloin steak large enough for 2, cut into portions
2 green peppers, cut into strips
1 large onion, cut and in rings
4oz. can mushrooms, drained
2 2/3 c. ketchup
1 1/2 c. strong coffee
1 1/2 c. water
3 beef bullion cubes
1 or 2 14 1/2oz. cans whole potatoes

Brown meat in skillet, then remove to a baking dish. Add potatoes around steak. Sauté peppers, onion and mushrooms slowly. Stir in ketchup, coffee, water and bullion cubes. Let simmer about 5 minutes. Pour sauce over steak and potatoes.
Bake at 350 for 1 1/4 hour.

Hamburger Veggie Soup

1 lb. hamburger, browned
1 can tomato soup
1 can vegetable soup
1 can bean and bacon soup
3 med. potatoes, cubed
5 carrots, diced
1 onion, chopped

Cook potatoes, carrots, and onion until tender. Add hamburger, soups and water as desired. Add pepper to taste. Heat through and serve.

Crockpot Chili

1 lb. hamburger meat
1 onion, chopped
2 cans Rotel tomatoes
2 cans Ranch Style beans
2 cans minestrone soup
1 tbsp. chili powder

Cook 4 hours and serve.

Pork Chop and Pea Casserole

4 potatoes (medium sized)
4 large pork chops
1 can English peas (with liquid)
3 Tbsp. butter

Peel and slice potatoes into a 9 x 12-inch baking dish, salt and pepper. Add pork chops, dot with butter; add can of English peas. Bake at 350 degrees for 1 hour and 15 minutes, or until brown and done.

Squash Casserole

3 c. cooked mashed yellow squash
3/4 sticks melted margarine or butter
2 eggs, slightly beaten
1 c. chopped onions
1 c. evaporated milk
1 c. shredded Cheddar cheese
3/4 c. shredded carrots
1 1/2 c. cracker crumbs
1 tsp. salt
1/2 tsp. pepper

Mix all ingredients together except for the margarine. Grease a 1 1/2 quart casserole dish with margarine. Put remaining margarine with squash mixture. Bake at 375 degrees for 40 to 50 minutes. While casserole is still hot sprinkle with a little extra cheese.

Mexican Style Squash Casserole

6 large yellow squash
1 can whole kernel corn, drained
1 small can green chilies, chopped
1 lb. Velveeta cheese
salt to taste

Cook squash until dry. Chop and cook off liquid again. add corn, chilies, Velveeta and salt. Simmer until cheese melts. Makes a lot.

Orange Soda Chicken

4 chicken breasts
1 can diet orange soda
1/4 c. soy sauce
Remove skin and fat from chicken. Mix soda and soy sauce in 9 x11 inch baking dish. Place chicken in soda mixture and bake at 325 degrees for 1 hour or until tender. Baste a few times as chicken cooks.

Pork Chop Casserole

1 lb. pork chops
1 c. instant rice
1 can onion soup

Place uncooked rice in bottom of a 3 quart casserole dish. Place pork chops over rice. Place 1 can of onion soup and 1 can of water over rice and pork chops. Bake covered at 350 degrees for 45-60 minutes until pork chops are tender.

Banana Pudding Cake

1 med. or 2 sm. bananas
1 yellow cake mix
1 sm. pkg instant banana pudding mix
4 eggs
1 cup water
1/4 cup oil
1/2 cup chopped nuts

Slice bananas into mixing bowl. Beat till well mashed. Add remaining ingredients. Blend; then beat at med. speed for 2 min. Pour into a well greased and floured 10 in tube pan or bundt pan. Bake @ 350 for 60- 70 min. or till done. Sprinkle with powdered sugar when cool. May also be baked in a 9x13 pan for 50-55 min. also.

Orange Creamsicle Cake

1 box (18.25 ounce) orange cake mix
2 (3 ounce) packages orange gelatin
1 (3 ounce) package vanilla instant pudding
1 cup milk
1 teaspoon vanilla extract
1 (8 ounce) container non-dairy whipped topping

Prepare cake mix according to package directions in a 9" x 13" pan. Cool. With a meat fork, poke holes all across the entire cake. In a small bowl dissolve 1 box gelatin in 3/4 cup boiling water. Add 3/4 cup cold water. Pour gelatin evenly over top of cake, making sure it gets into all the holes. Refrigerate for several hours.

Mix remaining box of gelatin, pudding, milk, and vanilla together. Beat well. Fold in dessert topping. Spread topping evenly over the top of cake and refrigerate for several hours.

Salsa Ground Beef Casserole

1/2 pound ground beef
1 small onion, chopped
3 cups frozen O'Brien potatoes, thawed
1 cup salsa

Brown ground beef and onion in large skillet. Pour off any drippings. Stir in potatoes and cook over medium heat for 5 minutes, stirring occasionally. Stir in salsa and continue to cook 10 minutes longer.

Lime Jello Salad

1 sm. pkg. sugar free Lime Jello
1 pint fat free Cottage Cheese
1/2 c chopped celery
1/2 c chopped walnuts

Mix Jello according to package directions. Add remaining ingredients. Chill until set.

Swiss Steak

2 to 2 1/2 lbs. round steak
1 pkg. onion soup mix
1/4 c. water
1 (10 oz.) can cream of mushroom soup

Cut steak into 5 to 6 serving size pieces. Place in crock pot. Add dry onion soup mix, water and soup. Cover and cook for 6 to 8 hours. Excellent with mashed potatoes. If you like lots of gravy use 2 packages soup mix and 2 cans of soup.

Some years ago I had a recipe calling for Jello, instant milk, and????

All I remember is hot water, ice, a blender, and when you got through you had a super whipped Jello dessert. I lost the recipe and have longed to find it since.

Summer Pasta Salad

16 oz. Zesty Italian dressing
2 c. fresh broccoli flowerets
16 oz. black olives, pitted
1 1/2 c. cherry tomatoes, halved

Marinate for about 3 hours in refrigerator. Cook 1 pound of tri-color macaroni spirals, drain and cool and toss with marinated vegetables, also mix in 1/4 cup of Parmesan cheese.

How do you fry fish without breaking? My experience in frying fish(salt and fresh water fish) always end up a disaster. The skin peels or sticks to the bottom of the pan and the creature that used to be a fish crumbles before my very own eyes, scrambled! What am I doing wrong or is it normal for a fish to shed it's skin before being digested? Will using a deep fryer solve my problem? Frankly, I have observed others frying fish perfectly, undisfigured, to the golden brown without the aid of a deep fryer. Any help you can render will be appreciated.

1 can Eagle Brand Milk
1 sm. can frozen lemonade
1 lg. container Cool Whip

Blend all ingredients together with mixer. Pour into 2 precooked pie shells and refrigerate.

1 pt. vanilla ice cream
1 (8 oz.) carton Cool Whip

Soften all ingredients. Mix together until smooth. Put in pie shell and freeze.

Lime Pie

4 eggs
1 can sweetened condensed milk
1/2 c. lime juice (Key Lime if available)
6 tbsp. sugar
1/2 tsp. cream of tartar

Preheat oven to 250 degrees. Separate eggs. Beat 4 egg yolks, add condensed milk and lime juice, beat until thick. Pour into baked pie shell. For topping, beat 4 egg whites. Blend in sugar and cream of tartar. Beat until stiff and forms peaks, bake in moderate oven until egg whites are golden brown.

Frozen Strawberry Salad

1 (10 oz.) pkg. strawberries
1 (12 oz.) can crushed pineapple
1 can Eagle Brand condensed milk
1 (9 oz.) container Cool Whip

Mix all ingredients together, put into a dish and freeze. Remove 15 minutes before serving.

Butter Pecan Ice Cream
Makes 1-1.5 quarts

2 cups light cream
1 cup brown sugar
2 tablespoons butter
2 cups heavy cream
1 teaspoon vanilla extract
1/2 cup toasted chopped pecans

Combine the light cream, sugar, and butter in a medium saucepan. Cook, stirring constantly over low heat until bubbles form around the edges of the pan. Let the mixture cool and put it in The ice cream machine. Stir in heavy cream and vanilla. Freeze as directed by your machine's manufacturer. Add pecan after ice cream begins to harden.

Zucchini Omelet

1 cup grated raw zucchini
1/4 cup chopped onion
2 Tbsp margarine
4 eggs, beaten
1/2 tsp salt
1/2 cup grated cheddar cheese
4 strips bacon, browned and crumbled

Sauté zucchini and onions in margarine in skillet until tender. Combine the eggs and salt and pour over mixture in skillet. Cover and cook on low heat just until set. Sprinkle over the top the cheese and bacon.

Skillet Chicken with Tomatoes

4 boneless chicken breast halves
1/4 cup chopped onion
1/3 cup grated Parmesan cheese
1/2 teaspoon rosemary, crushed
3 tablespoons flour
1 can (14.5 ounces) diced tomatoes with Italian seasonings
1 cup mushrooms, sliced

Flatten chicken slightly. Coat with 3 to 4 tablespoons of the Parmesan cheese and then coat with flour. Sprinkle with salt and pepper. In skillet cook chicken in oil over medium-high heat until done. Remove
to serving dish; keep warm. In same skillet, cook mushrooms, onion, and rosemary until soft. Add tomatoes; cook, uncovered, over medium heat until thickened. Spoon mixture over chicken; sprinkle with remaining Parmesan cheese. Serve chicken with sauce over spaghetti or other pasta.

Orange Smoothie
4 to 5 servings

2 cups milk
1 can (6 ounces) frozen orange juice concentrate, thawed
1/4 cup sugar
1 teaspoon vanilla extract
2 cups ice cubes

In a blender, blend all the ingredients until the ice cubes are crushed and the mixture is well combined, thick, and frothy. Pour into glasses and serve immediately.

Note: Garnish each serving with a slice of orange. These can be made into orange smoothie shakes by using ice cream instead of ice cubes.

Seems like I am always chopping onions to fix a meal. I was wondering if I chopped 3-5 lbs at one time and put the chopped onions in a ziplock bags and then put the ziplock bags in an air tight container, how long they would hold up in the fridge. I have tried the frozen and dried onions and don't really care for them. What were your results if you have done this?

Self-rising Corn Meal
To make one cup of corn meal use: 1 Tbsp baking powder, ½ tsp salt, ¾ cup + 3 Tbsp corn meal. Be sure the baking powder is fresh (not over 1 year old).
