Here's a Peanut Butter Cake they us to serve in grade schools in western NY. It was a big hit with all the students.

Peanut Butter Cake
1 c sugar
1 egg
1/3 c margarine
1 c sour milk
3 lg T peanut butter
1 1/ c flour
1 tsp baking soda
1 tsp vanilla
Mix, put in 9 x 13 pan. Bake 350º 35 min.

FROSTING
3/4 box confectioner sugar
3 T peanut butter
2 T melted margarine
add enough milk to spread easily

Linda, try making panini sandwiches in your George Foreman grill. It works almost as well as a regular panini grill. I do not butter the outsides of the sandwich, but use a cooking spray on them. (The spreads, of course, are on the inside of the sandwiches.)

Use a firm sliced bread such as sourdough or Italian. Preheat the grill for 5 minutes. Then cook the sandwiches for 5,6, or 7 minutes, checking after 5.

Make one with ham and cheddar and fresh tomatoes and fresh basil leaves, and spread the inside of the bread with a mix of Dijon mustard and balsamic vinegar.

Try sliced deli chicken, sliced fontina cheese, roasted red tomatoes (or plain ones) black olives and red onion. Spread one slice with pesto sauce.

Try sliced deli roast beef with sliced sweet onion and tomatoes and greens. Spread feta on one piece of bread . Spread caper mayonnaise on the other.

Just plain ham and cheddar and mustard are great also. Use your imagination!

Nancy I have finally finished reading and coping the last week or 2 week newsletters. First it has been hard for me to set at the computer for a long time but I have just done it and said to heck with the pain.

Last Friday, 5/15, my DH went in to have his third injection of pain medicine in his butt. He found out about 3 to 4 weeks ago that he has arthritis in the last 2 vertebra's. What they do is shot pain medicine in the area that hurts and they hope that it will relieve the pain. So far it is doing the job but a better test will be in 2 to 3 weeks. Then yesterday, 5/18, I had to go back for my 1 year check up on my left shoulder and 6 months on my right one. I have had pain in my left leg from my hip down to my knee. He X-rayed my hip and knees and they all are fine. He then told me that I have tendinitis and gave me to shots one in the knee and one up in the thigh area. I noticed relief right away and it is so nice to get out of chair and cars with out pain. Enough about pain.

Sunday, 5/17, we had to pick up our oldest granddaughter at her dad's. When we do this I always go to the bathroom before we leave because you never know how long it will take to travel down and pick her up and return to her mother's house. We were going towards I65 and an emergency vehicle passed us. We got on I65 going south and went just about ½ mile and had to stopped because traffic was backed up. We sat on the interstate for about 45 to 50 minutes. We had to make some calls so that our granddaughter dad knew that we were on our way but an accident was on the interstate. When we saw the vehicle involved in the accident you could not tell what type of vehicle it was. We both agreed that the vehicle was a total loss. Found out in one newspaper the next day that it was a SUV. The person that caused the accident wanted to kill herself to be with her family in heaven. I have prayed for her but, as she should, is being charged. Lucky the other driver was not serious injured. If you had seen the vehicle you could not believe that the person was not killed. It is sad that people think of only themselves and not anyone else. Hopefully the man that was injured will be out of the hospital soon. My DH said to me thank you for going to the bathroom before we left or we could have been involved in it.

Thank you to so many people for the recipes that have been in the last 1½ weeks newsletters.

The next week-end, Indy 500, on Sunday we are going to a party that we are all bringing something. I am taking Cheesecake Cupcakes and Brownies. The group of people that are going to be there love chocolate. Then on Monday I am taking the same things to take to another cook out. If anyone wants either recipe just let me know and I will post them. Also we have to pick up our granddaughter at her dad's on Monday. We are thinking about going another way and then getting on I65 going the rest of the way to her dad. We will be coming back on I65 all the way.

Nancy my brain with the other message must have been asleep, but I wanted to respond to Linda in the 5/17 newsletter. Linda you can cook bacon, hot dogs, grilled cheese or ham and cheese sandwiches, parboil bratwurst then grill on the grill for marks from the grill, sausage links or patties, pork chops, hamburgers, Ruben sandwiches and salmon or crab cakes. You can also cook vegetable on the grill.

Hello Nancy and and all fellow subscribers. Nancy you do a terrific job. I am thinking of purchasing a Nu-Wave oven the one you see on the infomercial's. If any one has one, would you please let me know if it lives up to what they say. There is just me and DH, who is pretty sick, so sometime I have to make quick last minute decisions on what to cook. Would be so much easier if I could just take a little something out of freezer and cook it right away for him. Defrosting food and then having him not want to eat is such a waste and if this really works would be a lifesaver. I don't like defrosting in the microwave as doesn't do that good of a job. Any help would be appreciated.

Karen in Texas is looking for healthy casseroles, have you checked here http://www.abbys-kitchen.com/casserole.asp ? There are lots of casseroles listed. One of our favorites is:

Easy Garden Quiche
2 c. chopped fresh broccoli *
1/2 c. chopped onions
1/2 c. chopped green peppers
1 c. shredded non fat Cheddar cheese
1 1/2 c. skim milk
3/4 c. no cholesterol Bisquick
1 tsp. salt
1/4 tsp. pepper
3/4 c. egg substitute

Heat oven to 400 degrees. Lightly spray pie plate with vegetable oil. Heat 1 cup water with 1/2 teaspoon salt to boiling. Add broccoli, cook until tender, drain thoroughly. Mix broccoli, onion, green pepper and cheese in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender. Pour into pie plate. Bake until golden brown and knife inserted halfway between center and edge comes out clean, 35 to 40 minutes. Let stand 5 minutes before cutting. *1 package (10 ounce) frozen chopped broccoli or cauliflower, thawed and drained can be substituted for fresh broccoli. (Do not cook.)

Betty, who is wanting a recipe from long ago for shrimp; I have the recipe card collection from 1971 from General Mills. I have looked throughout the cards and do not find one that has tomato soup and mayo. Now I have found one with the soup, but it is served over patty shells, not rice. It could easily be served over rice, though. I am enclosing it here. Hope it is the one! It was listed under Impromptu Party Fare.

Jiffy Shrimp in Patty Shells
7 slices bacon, diced
1 c. minced onion
1 c. minced celery
1 can – 4 oz. – mushroom stems & pieces, drained
2 cans – 10 3/4 oz. ea. – condensed tomato soup
2 cans – 4 1/2 oz. ea. – shrimp, drained
½ c. finely chopped green pepper
6 baked patty shells
parsley

In skillet, fry bacon until crisp; remove and drain. Pour off all but ¼ c. bacon drippings from skillet. Cook and stir onion, celery and mushrooms in drippings until onion is tender. Stir in soup, shrimp and green pepper; heat through. Serve in patty shells; sprinkle with bacon and parsley. 6 servings. Betty Crocker.

In the 5/16/09 newsletter Nancy in La Vernia, TX was searching for a recipe that her mother used to make. She called it vegetable loaf. Here are two recipes that may be close to her mom’s recipe. Both are from previous newsletters; I regret I do not know who submitted the first recipe, so can’t give credit to them.

Vegetable Puff
Yield: 6 servings

Note: Perfect for brunch or lunch, vegetables are baked with an egg custard.

Vegetable cooking spray
4 ounces mushrooms, sliced
1/2 cup chopped red bell pepper
1/2 cup finely chopped shallots
2 cloves garlic, minced
1 pound broccoli heads, cooked, coarsely chopped
1 cup finely shredded carrots, cooked
2/3 cup frozen corn, thawed
2 teaspoons lemon juice
3/4 teaspoon dried thyme leaves
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup fat-free half and half or fat-free milk
2 tablespoons flour
1 cup no-cholesterol real egg product
5 large egg whites
1/2 teaspoon cream of tartar

Spray large skillet with cooking spray; heat over medium heat until hot. Sauté mushrooms, bell pepper, shallots, and garlic until tender, about 4 minutes.

Stir in broccoli heads, carrots, corn, lemon juice, and thyme; sauté 5 minutes. Transfer mixture to large bowl and stir in salt and pepper. Whisk half and half and flour until smooth in small saucepan. Heat to boiling; boil, whisking constantly, until thickened, about 1 minute. Whisk about half the mixture into egg product; whisk egg mixture back into half and half. Stir into vegetable mixture. Beat egg whites in large bowl until foamy. Add cream of tartar and continue beating until stiff peaks form; fold into vegetable mixture. Transfer mixture to a lightly greased 1-1/2 quart casserole. Place casserole in a large roasting pan on center rack of oven; add 2 inches hot water to pan. Bake, uncovered, at 375*F 35 minutes or until casserole is puffed and lightly browned on top. Serve immediately.

Beth’s Vegetable Casserole

1 cup lima beans (If you use canned vegetables, drain well.
1 cup carrots I use frozen except for the potatoes, onions and celery.)
1 cup potatoes
1 cup peas
1 cup corn
1 cup celery
1 cup onion
1 cup shredded cheddar cheese
1 cup mayonnaise
1 can cream of chicken soup *

Mix mayonnaise and soup together with cheese and add to all the vegetables. Use a 13” X 9” pan.

1-package Ritz crackers
1 stick butter

Crush crackers and combine with melted butter and put on top of casserole. Bake 350 degrees for 35 minutes.

* You can use 1/2 can Cream of Potato Soup and 1/2 can Cream of Celery Soup OR 1 can of either in place of the Cream of Chicken Soup. My son has been a
vegetarian for about nine plus years and I have to modify recipes when he comes over.

Good Morning All,
Linda re your George Foreman grill, the choices you have are endless. Buy one of the one calorie oil sprays and spray the inside before switching it on. The only thing I haven't cooked is eggs, but I have made French toast, bacon, sausages, fried bread, grilled tomato and that's just breakfasts. Aubergine (egg plant), courgette, asparagus wrapped in parma ham, roasted cheese toasties. Recently I have started making paninis. You will soon start to wonder how you ever managed without one. Once you have finished cooking and turned the grill off, a good way to make cleaning easy is to take a few sheets of kitchen roll wet them in soapy water and place between the plates. Whilst the machine is cooling it is also getting any sticky bits off on the kitchen towel and makes later cleaning a breeze. Happy grilling.

Hello Nancy. I hope you know that you and your dear ones are always in my prayers. You are such a caring person as well as a great e-mail hostess!
In the May 14th mailing, Linda asked what to cook on her George Foreman Grill. I use it for hamburgers, hot dogs, lamb chops, marinated flank steak, and grilled sandwiches as well as steaks. Grilled cheese sandwiches are wonderful and easy on it. We love kosher baloney and salami . Sometimes I'll grill slices of them on the Foreman grill and pop them into sandwiches, too. How about a grilled ham and cheese sandwich? Enjoy the grill.

Chris in NM re green boxes: I don't think they are sold in stores. I bought them on the home shopping channel. Just type in green boxes if you are interested. They are fantastic. Everything lasts a very long time.

May 17th newsletter

This is for Sue, who requested a recipe for 'bourbon' chicken.

I had just recently copied this from one of the many cooking blogs I have become addicted to and now can't remember exactly which one. I have not tried it yet, but would love to hear how you liked it if you do.

Bourbon Chicken
2lb boneless skinless chicken breasts
4 tablespoons oil (for pan-frying)
cornstarch (for dusting, optional)

Sauce:
1 garlic clove (minced)
1/4 teaspoon ginger (I used ground ginger)
1/2 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoon ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

Cut chicken breasts into bite-sized pieces, and if you choose lightly dust with cornstarch. Heat oil in your wok and fry chicken bits in batches until lightly browned. Drain on paper towels and set aside.

In a bowl combine all sauce ingredients. Pour into wok and bring to a boil. Add chicken bits back to the pan, reduce the heat and simmer for 10 minutes.

Question is, how much more flour? Is that 1/2 or 1/4? I would like to make this and put a chocolate frosting on it.

I also think spelling out the word "cup" and using TBS and TSP for tablespoon and teaspoon makes it easier for people to read. Especially the "senior" folk.

I need help from the world of ‘Landers’ for sack lunch ideas for my grandsons attending a Jewish Day Camp. They all like fruit so that isn’t a problem; need ideas for sandwiches, etc. other than peanut butter and jelly. I know Hebrew National makes wieners for hotdogs so that would be one option but need more of a variety. I think a microwave is available at the facility. My DIL asked me for ideas and I knew this great group would have the answer! Thanks

Linda, regarding using your medium George Foreman grill, I fix our bratwursts in our indoor grill. It does a very good job on them. I have also fixed pork chops and hamburgers in it. One thing I have learned, you need to be careful of pieces of meat with bones in. They do tend to scorch. You could also make paninis in yours! The grill does a great job on sandwiches and quesadillas. Find lots of sandwiches of all kids on Nancy’s message board under sandwiches. Chris in NM

Sue, Nancy has lots of smoothie and shake recipes. This is a favorite.

Strawberry Smoothie
2 c. vanilla ice cream
1- 1/2 c. strawberries
2 tbsp. sugar
2 tsp. lemon juice
2 c. crushed ice

1 cup milk
2 packets hot cocoa mix
1 teaspoon vanilla extract
3-4 cups ice cream

Cajun Cafe's Bourbon Chicken Copycat/Clone

1/2 C. soy sauce
1/2 C. brown sugar
1/2 t. garlic powder
1 t. powdered ginger
2 T. dried minced onion
1/2 C. bourbon whiskey
1 lb. boneless chicken leg or thigh meat cut into bite size chunks
2 T. white wine
Cooked white rice, optional

In a large bowl, combine soy sauce, brown sugar, garlic powder, ginger, onion and bourbon; stir until sugar has dissolved. Add chicken and stir to coat. Cover and refrigerate for several hours or overnight.

Place chicken and the marinade in an 8 x 8 inch glass baking dish and bake in a preheated 350°F. oven for 45 minutes, basting every 10 minutes with pan juices. Remove chicken. Scrape pan juices with all the brown bits into a frying pan. Heat over medium heat and add white wine. Stir and add chicken. Serve immediately with pan juices over cooked rice. Serves 4. Linda, there are several different taco casserole in Nancy’s repertoire. This is the one I fix oftentimes in the winter.

Baked Taco Casserole (Beef)
1 pound ground beef
1 envelope (1 1/4 ounces) taco seasoning mix
1 cup Bisquick Original baking mix
1/3 cup cold water
3/4 cup shredded Cheddar or Monterey Jack cheese (3 ounces)
Sour cream
Shredded lettuce
Chopped tomatoes
Jalapeno slices

1. Heat oven to 450 degrees. Grease square pan, 8x8x2 inches. Cook beef and taco seasoning mix as directed on envelope of seasoning mix. 2. Mix baking mix and cold water until soft dough forms; spread in pan. Spread beef mixture over dough. 3. Bake uncovered 25 to 30 minutes or until edges are golden brown and toothpick inserted in center comes out clean. Immediately sprinkle with cheese. Let stand 1 to 2 minutes or until cheese is melted. Serve topped with remaining ingredients.

This is a favorite and you can use any flavor of Jell-O you want! I use lemon, lime, black cherry.

Jello Dream Whip Salad Mold
1 pkg. orange Jello
1 c. boiling water
3/4 c. cold water
1 tbsp. sugar

Let stand. Mix Dream Whip as on package. Fold into Jello mixture and chill.

This is for Donna in NW GA: The large black ants are probably carpenter ants. They are not attracted to sweets, but rather wood. Many years ago, our neighbor on the one side of our house, stored wood for burning in their fireplace under their porch. We found a trail of ants from there to our house and up under the siding. They made a nest in our roof and I could hear them in the wall upstairs. They sounded like something munching on potato chips. We had a profession exterminator come for several years to be sure we were rid of them. Then we had to replace our roof, so they are very damaging. We now buy an over the counter ant granule. I believe it is made my Ortho. We sprinkle it around the perimeter of the house once a month during the warm weather months. The ants carry these granules back to their nest and kill them. At that same time, we also use a spray in our basement for other insects. We see an insect from time to time, but they never amount to any problems. I don't mean to scare you, but you should try to stop them from coming in, so it doesn't lead to something scaring.

Hello everyone hopes this finds everyone in great spirits. I wanted to thank Sylvia in Scotland and Carol in MA and Chris in NM for the cooking suggestions for the T-bone steaks. A friend of mine is a butcher and sold them for $3.00 a pound who would pass that up? LOL. I will try all your suggestions. Yes Sylvia, I do have a grill but I must confess to pure laziness. I am 44 with a 9 year old and a 17 month old , a husband from down deep in K.Y where ladies do house work and, care for the children, he works and when he comes home no help. So come dinner time baby's screaming and the 9 year old need help with home work then trying to tackle dinner in the oven or stove top it goes. To Mary Alyce in WI I remember the jar cheese you are talking about my mom loved it . I liked the ole English jar cheese did you try writing to Kraft to see maybe they could steer you in the right direction or see if the still sell it in another area. Well I am off baby is awake thanks to all your responses.

We have used the slider, also. We put some finely chopped onions down in the cups and then mixed some Worcestershire with the meat, placed the required amount of meat on top of the onions and cook. They were delish.

In May 17th newsletter there was a request for jello salads. This is an old recipe that has instant pudding in it instead of jello but should still ba a good one for summer

Watergate Salad
2 boxes pistachio instant pudding mix
1 cup chopped pecans
2 cups miniature marshmallows
1 large tub Cool Whip
1 large can crushed pineapple, undrained

In a large mixing bowl, mix the dry pudding mix with the pineapple and juice until pudding mix is mostly dissolved. Fold in the Cool Whip, then marshmallows and chopped pecans. Chill in refrigerator for 2 hours before serving.

McDonald's Shakes (Copycat/Clone/)
Makes 2

2 cups ice cream (your choice of flavor)
1 1/2 cups low-fat milk
3 Tablespoons sugar
1/4 teaspoon pectin

Combine all ingredients in blender.


Easy Pudding Milkshake ~ Makes 1
from Nancy's Newsletter

1 c. milk
2 tbsp. Jell-O pudding, any flavor
1 scoop (1/2) ice cream, any flavor, softened

Pour milk into shaker. Add pudding mix and ice cream. Put lid on shaker. Shake hard for 1 minute. Open shaker. Pour into glass and drink.


Ice Cream Parlor Chocolate Malt
Makes 4-3/4 cups
315 Calories from Recipezaar

3/4 cup milk
1/4 cup natural instant malted milk powder
4 cups chocolate ice cream

In 5 cup blender container, combine milk and malted milk.

Blend at medium speed, stopping blender frequently to scrape sides, until instant malted milk is dissolved (30 to 40 seconds).

Add ice cream; continue blending, stopping blender frequently to scrape sides, until smooth (30 to 40 seconds). Serve immediately.

This is for the lady who just bought a George Foreman Grill, I use mine to grill vegetables, I use a little olive oil, a little salt. I love to grill asparagus, yellow squash, onions. My DH didn't like asparagus but he does like it fixed this way. If anyone else has any ideas, I would love to have them. Thanks Nancy for all you do,

Linda said in the May 17th newsletter that she was looking for things to make with her George Foreman Grill. I make Hamburgers and hotdogs the same as on a regular grill. I also made pork loins too. They turned out really great. I even put on a piece of country ham and it was delicious. Mine is a Hamilton Beach which was a little cheaper from Wal-Mart but has a nice big cooking area. I just love that my grilling plates come out for cleaning. Wal-Mart doesn't have it now but I sure hope I can find another one when I need one. It is the same size as the big Foreman one with the three different plates but about $50 cheaper.

This is for Linda NM who wanted bread recipes using acorn squash or squash other than zucchini. This is a muffin recipe rather than a bread recipe, but maybe it will help you.

Butternut Squash Muffins
1/2 pound peeled, seeded and cubed butternut squash
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup white sugar
1/4 teaspoon salt
2 teaspoons pumpkin pie spice
3/4 cup milk
1 egg, beaten
1 tablespoon butter, melted

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 12 cup muffin pan. In a medium saucepan with enough water to cover, boil squash 20 minutes, or until tender. Remove from heat, drain, and puree in a food processor.

In a large bowl, whisk together flour, baking powder, white sugar, salt and pumpkin pie spice.

In a medium bowl, thoroughly mix together milk, egg and butter. Stir in squash. Fold the squash mixture into the flour mixture just until moistened.

Spoon the batter into the prepared muffin pan, filling cups about 1/2 full. Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean.

I am looking for a recipe for left over hog dog rolls baked with a custard-type sauce post in Nancy's newsletter quite some time ago. I made it several time and it was delicious. However I have lot the recipe.

Glazed Ham Steak

1 1/4 lb. ham steak
1/2 cup light brown sugar
1 tbsp. dry mustard
1/3 - 1/2 cup pineapple juice

Preheat oven 350°.

Place ham steak in baking pan. Sprinkle brown sugar and dry mustard over ham. Pour 1/3 to 1/2 cup pineapple juice over ham. Bake at 350° about 15-20 minutes.


This is for DP in Denver. Just wanted to suggest purchasing a stool that is slightly higher than a chair to work in the kitchen. I have awful knees and I can't stand either. I have been cooking, chopping and doing dishing from my stool for years now. I wouldn't be with it! Hope that helps :)

Hi Nancy - This is for Linda wanting recipes for her George Forman. I haven't used my George Forman for quite a while. When I was working I used it almost every night. One of my favorite things was to marinate green pepper (or yellow or red) slices, zucchini slices, onion slices and mushroom slices in Italian dressing and then grill them. I don't remember how long I grilled them. I think I just kept checking on them til they were done the way I liked them. Sometimes I would just throw some meat at the same time.

This is a recipe that was in a monthly magazine put out by my electric company. It is even good cold the next day in a sandwich.

Oven Fried Coconut Chicken
4 boneless, skinless chicken breast halves
1/4 C. flour
1 tsp. seasoned salt
1/2 tsp garlic salt
1 egg, beaten
1/2 C. butter
1/2 tsp. black pepper
Mix four, salts and pepper together. Beat egg in a separate bowl. Put coconut in a separate bowl. Dip Chicken in flour, then egg, then coconut. Put in 9x13 pan. Melt butter and poUr over chicken. Bake at 400 degrees for 30 minutes, flip and bake for another 30 minutes. I'm supposed to be watching my salt intake, so I just used the garlic salt in this recipe.

For: Donna in NW GA for he black ants. My favorite thing is a mixture of sugar and baking soda. The sugar attracts them and the soda kills them (they can't digest it). They also carry some back to their nests. I keep a small container of it all the time. I just spread a thin line along where I see them.

Response to Linda's request on 5/17 for recipes for George Forman Grill.

I have made sausage and peppers and onions on it. Sliced zucchini brushed with olive oil and salt and pepper. Salmon brushed with olive oil, minced garlic and teriyaki sauce. Most veggies can be brushed with olive oil and salt and pepper. Most meats and fish also can be cooked on it. I use my grill at least 4 or more nights a week. I cook hamburgers and hot dogs on it.
I've cooked pork chops on it.

Everything cooks much faster on it because it cooks both sides at the same time so be careful to watch you don't overcook things.

Donna in NW Georgia, your ants sound like carpenter ants so probably are seeking a place in your house to nest rather than a meal. Here's an article from your Georgia Extension Service with info.

Regarding your black ants. I found that sprinkling Baking Soda around the baseboards of each room and the edges of closet floors retards the ants from going any further. I also sprinkle it on my window sills along my screens and also had good results with this last year.

Donna in NW Georgia, from your description it sounds like you have a bad infestation of carpenter ants. To properly get rid of them you need to call an exterminator. They hang out in the attic sometimes and invade the home. They are very destructive to houses and also to trees. We had three trees beside our house that were full of them, so it was just a hop for them to come visit the house. We had the exterminator spray in the attic, storage space and all around the house. So far, no more carpenter ants. Good Luck!
