For Florence in Indiana:
Fresh Orange Layer Cake
2-1/4 cups cake flour (I use all-purpose)
1-1/2 cups sugar
2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1/2 cup butter or margarine (I use butter)
1/4 cup orange juice with pulp
3/4 cup water or milk (I use milk)
2 eggs, unbeaten
Sift dry ingredients together in a large bowl. Add butter. Mix
orange juice and milk (or water) and add 2/3 of this mixture to the
dry ingredients. Beat vigorously with a spoon about 2 minutes (about
300 strokes), or mix on low speed of an electric mixer for 2
minutes. Add remaining liquid and eggs. Beat for 2 minutes more.
Pour batter into prepared 8" or 9" layer pans. Bake at 350 degrees
about 30 minutes or until tested done.
Frost with butter cream frosting made with orange juice instead of
milk.
