For Grandma Teeters-- Yellow Squash-- Another very good casserole for you;

Yellow Squash Casserole

3 pounds yellow squash
1 cup chopped onion
1 1/2 cups crushed saltines (divided)
1 stick melted butter (divided)
1/2 teaspoon black pepper
1 teaspoon salt
2 beaten eggs
2 heaping tablespoons sugar or substitute
1 small jar chopped pimentos

Wash and trim squash and cut into 1 to 2 inch slices and boil in water until tender. Drain and mash in a colander. Mix the squash with 1/2 the melted butter and 1 cup of the crushed crackers and all the rest and pour into a 8x8 shallow baking dish sprayed with cooking oil. Pour the other 1/2 of the butter over the top and sprinkle with 1/2 cup crushed crackers. Bake in a 375 F oven for about and hour.
Serves 6

Note; you do not want the crushed crackers to be cracker meal. Coarser the better
