Here is a recipe for Green Tomato mincemeat for the lady in Illinois in July 21st newsletter. Also including a recipe for Green Tomato pickles. We use less than the 1 cup of salt that the recipe calls for. Too much salt for our taste but they are excellent sliced on a sandwich.

Green Tomato Mincemeat #2

6 lbs. Green tomatoes
2 lbs. Tart apples
4 cups dark raisins
4 cups brown sugar
2 cups apple juice or cider
? cup cider vinegar
2 tsps. Grated orange rind
2 tsps. Grated lemon rind
1 tsp. Ground nutmeg
1 tsp. Ground allspice
5 tsps. Cinnamon

Core and quarter apples and tomatoes. Do not peel. Put in food chopper and chop coarsely, or chop by hand. Combine all ingredients in a large kettle. Do not use aluminum. Simmer for 2 hours, stirring frequently until thick. Put in containers and freeze until needed or process in canning jars.
