Hi Nancy,
Thanks for a wonderful site for us to 'look at and check for
recipes'. I thoroughly enjoy it! What a wonderful group of
cooks! This is in response to Georgia who is looking for a
good crab cake recipe in the 7-9-2009 newsletter. I use this
one and I am satisfied with the results.
Great Crab Cakes
1 lb. lump crabmeat (picked)
2/3 cup good mayonnaise (Hellmans)
1/3 cup bread crumbs (unflavored/store bought)
1 tsp. parsley flakes
1/2 tsp. Old Bay seasoning
1/4 tsp. Worcestershire sauce
3-4 drops yellow mustard
Mix wet ingredients and seasonings first, then carefully
fold remaining ingredients in as not to break crabmeat
lumps. I BROWN on top of stove in frying pan with a little
shortening or oil. You can also bake for 20 minutes on
sprayed cake pan in preheated 500 degree oven with a pat of
butter on each crabcake. Makes approx. 6 cakes or less if
you like them thicker.
