Bread Salad
1 box Italian croutons
2 c. tomatoes, chopped OR 2 pkg. grape/cherry tomatoes,
sliced
1 c. mozzarella cheese, cubed
1/4 c. fresh basil, thinly sliced OR 2 shakes of dried basil
1/4 c. (3) green onions, thinly sliced
Red Wine Vinaigrette:
1/4 c. olive oil
2 tbl. red wine or raspberry vinegar
1 - 2 cloves garlic, minced
1/4 tsp. salt
1/4 tsp. pepper
Toss bread, tomatoes, cheese, basil and green onions
together in a large bowl. In a jar with a tight fitting lid,
combine vinaigrette ingredients. Cover and shake till well
mixed. Drizzle vinaigrette over bread salad and toss to
coat.
